Celery Stuffed with Bleu Cheese and Cream Cheese Recipe

Ingredients:
6 large ribs of celery
1/4 cup crumbled bleu cheese
1 package (8 ounces) cream cheese
Heavy cream
Salt and pepper

Instructions:

Clean the ribs of celery and cut them into 3- to 4-inch pieces.

Mix the crumbled bleu cheese with the cream cheese, adding a little cream to make it smooth, if necessary. Add a little salt and pepper to taste.

Stuff into celery, and serve.

Yield: 18 pieces

Celery with Sesame Recipe

Ingredients:
4 stalks celery
1 tablespoon vegetable oil
2 teaspoon sake
pinch of Stevia
4 teaspoon soy sauce
2 tablespoon sesame seeds, lightly toasted and crushed
ground dried chili peppers

Instructions:

Cut celery into 2-inch segments. Cut each segment into lengthwise 1/4-inch strips.

Heat the oil in a frying pan over high heat and add the celery. Stir fry until just tender, about 1 minute.

Add the sake and Stevia and stir until the liquid has evaporated. Add the soy sauce and stir until the liquid is almost gone. Stir in chili pepper to taste.

Transfer to a dish and sprinkle with the sesame seeds ( Crush Sesame seeds by putting in a small plastic bag and roll with a rolling pin until crushed.)

Goes well with Japanese Foods

Serves 4

Pimento Spread Recipe

Ingredients:
1 package (8 oz.) cream cheese, softened to room temperature
1/4 cup mayonnaise
2 oz. diced pimentos, drained
3 tablespoons sliced green onions
1/4 teaspoon hot pepper sauce (optional)

Instructions:

Mix cream cheese and mayonnaise in small bowl with electric mixer on medium speed until well blended.

Stir in pimentos, green onions and hot pepper sauce.

Cover and refrigerate at least 1 hour for flavors to blend.

Spread on cucumber slices or celery.

Makes 12 servings of 2 tablespoons each.

Avocado Beef Rollups Recipe

Ingredients:
1 medium avocado
1 tablespoon lime juice
1/2 teaspoon salt
1/2 teaspoon chili powder
1/8 teaspoon coriander
4 drops Tabasco sauce
1/4 cup tomato, chopped
18-20 thin slices roast beef (round tip)

Instructions:

Mash avocado, add lime juice, onion salt, chili powder, coriander and tomato. Combine thoroughly.

Spread on slices of cold roast beef, allowing about 2 teaspoons filling for each slice. Roll up slices; wrap and chill.

To serve: cut rolls in halves or thirds, depending upon length. Secure each piece with a small wooden pick and arrange on platter.

Spinach Vegetable Dip Recipe

Ingredients:
1 pack frozen chopped leaf spinach
1 pint mayonnaise (16 oz)
1 cup sour cream (8 oz.)
1/2 cup chopped onions

Instructions:

Thaw and drain spinach well. Thoroughly mix all ingredients together.

Chill, for best results, chill overnight.

Serve with fresh cut vegetables – celery, green peppers, mushrooms, cucumbers, radishes, asparagus or raw or lightly steamed green beans or cauliflower.

Zucchini Latkes Recipe

Ingredients:
2 zucchini, grated & squeezed dry
1 tsp garlic, minced
2 tablespoons onion, grated or finely chopped
1 egg, well beaten
1/4 teaspoon salt & pepper
Splash Tabasco

Instructions:

Mix all ingredients well, let sit for a few minutes for flavors to mingle.

Heat nonstick skillet on medium, wipe with olive oil. Drop zucchini mixture by large cereal spoonfuls and cook until set & lightly browned (5-6 minutes), flip and cook 3-4 minutes on reverse.

Garlic Zucchini Recipe

Ingredients:
2 large zucchinis
10 cloves of garlic
Olive Oil
Salt

Instructions:

Perfect recipe for those who just love garlic!

Grate the zucchinis. Chop the cloves of garlic

Sauté zucchini and garlic in Olive oil. Add salt to taste.

Sesame Green Beans & Peppers Recipe

Ingredients:
1 lb fresh green beans
1 medium sized red bell pepper (can use yellow) cut in 1/4″ strips
2 tablespoons toasted sesame seeds
1 teaspoon sesame oil

Instructions:

Trim green beans and blanch in boiling water about 2 minutes. Drain and rinse under cold water. Place in a serving bowl with bell pepper and toss with remaining ingredients.

Marinated Cucumber Recipe

Ingredients:
2 to 3 Cucumbers, large
1 teaspoon salt
1 packet Stevia
1/4 cup vinegar
1/8 teaspoon fresh ground pepper
Fresh garlic

Instructions:

Score cucumbers with tines of fork. Cut into very thin slices. Sprinkle with salt. Chill 2 hours; drain well.

Sprinkle with Stevia; add vinegar and pepper. Marinate 30 minutes or more before serving.

Spanish Mushroom Recipe

Ingredients:
1 can mushrooms
2 tablespoons butter
6 shallots
1 clove garlic, chopped fine
2 tablespoons white wine
Parsley
Thyme
Salt
Pepper

Instructions:

Drain can of mushrooms.

Heat butter butter in a fry pan. Add shallots and garlic, some parsley and thyme and the mushrooms.

Let all fry a few minutes; then add the mushroom liquor and 2 tablespoonfuls of white wine, salt and pepper to taste. Let simmer five minutes and serve hot.
