These Tex-Mex treats are always popular as party snacks.

I did not put amounts on most of the ingredients as that will depend on how many you want to make and how many other appetizers you have.

Ingredients:

Low-Carb Tortillas  https://amzn.to/40xqfDK
Shredded 4 Cheese Mexican Blend  https://amzn.to/3NTQuNj
1 cup –  shredded chicken breast or thighs or a blend
1 small white or yellow Onion diced
Cumin, garlic powder, chili powder, black pepper
Olive or avocado oil for sauteing

Toppings:

Sour Cream, Quacamole, Salsa

Instructions:

  1. Season Chicken and onion to taste and sauté.
  2. Cover Tortilla lightly with cheese blend, sauteed chicken/onion mix, top with more cheese and another tortilla. Sauté in pan (or bake in oven at 325 until cheese melted.) Depending on size of tortilla cut into 4, 6 or 8 wedges.
  3. Top with a dollop of Sour Cream or Quacamole and a bit of Salsa.
  4. Or if setting out on buffet you can put out toppings in bowls and let the guest do their own.
