No Noodle Lasagna Recipe

Ingredients:
2 pounds lean ground beef, browned in olive oil
1/2 small onion, diced
1/2 red or green bell pepper, diced
15-16 ounces ricotta cheese
Two eggs, beaten slightly
8 ounces tomato sauce
1/2 small can tomato paste
1/2 cup dry red wine
2 tablespoons Italian seasoning
1/2 teaspoon fennel seed
Fresh chopped parsley
Five large mushrooms, sliced thin
Two medium zucchini, sliced lengthwise
1 pound spinach, steamed
Salt and pepper to taste
One or two cloves garlic, crushed
8 ounces mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded

Instructions:

Brown the meat in about 2-tablespoons olive oil. When meat is nearly done, add the onions and bell pepper and saute until the onions just begin to soften. Add garlic and continue cooking until onions are transparent.

Add tomato sauce and tomato paste along with the red wine. Mix well; add seasonings and simmer until quite thick.

Beat the eggs and ricotta together with some fresh chopped parsley, salt and pepper.

Preheat oven to 325-degrees.

Spray a 9 x 13-inch baking dish with olive oil or butter flavor Pam.

Spread 1/2 of the meat mixture in the bottom of the pan. Top with sliced zucchini. Spread zucchini with the ricotta mixture, and top with spinach and mushroom slices. Top that layer with half of the cheeses. Cover with remaining meat mixture, top with remaining cheese.

Bake at 325-degrees until the cheese is bubbly and starting to get golden (about 35 to 45 minutes.)

Eight servings, 8 carbs a serving.

Morrocean Veal Recipe

Ingredients:
2 1/2 lbs veal, cut big chunk
1/2 cup almonds, dry-roasted, browned
1/4 cup chopped onions
2 sprigs coriander leaf, green
2 tablespoons butter
5 hard-boiled egg, peeled and sliced
Salt
Pepper
Saffron

Instructions:

Mix meat chunks, 1/4 cup almonds, dashes each of salt, pepper and safron, onions and green corriander – tied together to make it easier for removing after cooking.

Add 2 tablespoons butter and fry till brown. Add water to cover the mixture. Cover pan and cook over medium heat till meat is tender. Remove the green corriander and let cook on low heat till liquid is absorbed.

Serve meat mixture and decorate face with sliced eggs and almonds.

Serve with green salad.

Beef Tenderloin Steak with Balsamic Sauce Recipe

Ingredients:
4 beef tenderloin steaks (6-ounce)
2 tablespoons coarse-grain sea salt
1 tablespoon coarsely ground pepper
2 tablespoons olive oil

Balsamic sauce:
1/4 cup dry red wine
1/4 cup dry sherry
3 tablespoons balsamic vinegar
1 shallot, chopped
2 garlic cloves, chopped
2 egg yolks
1/3 cup unsalted butter, melted

Instructions:

Rub tenderloin steaks evenly with salt and pepper.

Cook steaks in hot oil in a large ovenproof skillet over high heat 2 to 3 minutes on each side.

Bake at 350 degrees for 8 to 15 minutes or to desired degree of doneness. Serve with Balsamic Sauce.

Balsamic Sauce:

Bring first 5 ingredients to a boil in a small saucepan. Cook 2 minutes. Cool mixture.

Whisk egg yolks into wine mixture and cook over low heat, whisking constantly, until thickened. Slowly whisk in butter until blended.

Serve immediately. Makes 1/2 cup.

Beef Cheese Casserole Recipe

Ingredients:
1 pound lean ground beef
1 medium onion, chopped
4 oz. mild green chiles
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 can (8 ounces) tomato sauce
1/2 cup shredded Monterey Jack or Mexican blend cheese
1/2 cup sour cream
1 egg, lightly beaten
1 cup shredded Monterey Jack or Mexican blend cheese

Instructions:

In a large skillet, brown ground beef with onion; drain. Add chiles, chili powder, cumin, garlic powder, salt, and tomato sauce. Simmer.

In a 9-inch square baking dish, combine 1/2 cup cheese, sour cream and egg. Remove meat mixture from heat then stir in sour cream mixture.

Sprinkle the meat mixture with 1 cup of shredded cheese. Bake at 375° for 25 to 30 minutes.

Carb Count: 9 carbs per serving. Serves 4.

Ham Salad Recipe

Ingredients;
3 cups coarsely ground ham
2 hard-cooked eggs, chopped
1/2 cup chopped celery
1/2 cup mayonnaise
2 teaspoons prepared mustard
1/8 teaspoon black pepper

Instruction:

In medium bowl stir together all ingredients.

Makes about 3 3/4 cups, enough for 6 sandwiches.

Garlic Dill Meatballs

Ingredients:
1 pound ground chicken
1/2 pound ground pork
1 small onion, finely chopped
1/2 cup ground pork rinds (optional)
1 egg
2 garlic cloves, pressed
2 tablespoon chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper
2 tablespoon olive oil

Instructions:

Heat oven to 375 degrees.

Combine chicken, pork, onion, pork rinds, egg, garlic, dill, salt and pepper in a bowl and mix well. Divide mixture into 18 (1 1/2-inch) meatballs.

Heat oil in a large ovenproof skillet over medium-high heat until very hot. Brown meatballs (in batches, if necessary) on all sides, about 6 minutes.

Transfer skillet to oven; bake 10 minutes or until meatballs are cooked through.

4 servings.

Basil Stuffed Lamb Roast Recipe

Ingredients:
3/4 cup chopped onion
1/3 cup chopped celery
2 cloves garlic, minced
1/4 cup olive oil
2 beaten eggs
10 oz frozen chopped spinach, thawed
1/4 cup snipped parsley
3 tablespoon fresh snipped basil
1/4 teaspoon dried marjoram, crushed
1/4 teaspoon pepper
1/2 cup water
1/4 cup grated parmesan cheese
1 5-7 pound leg of lamb, boned and butterflied
1 teaspoon dried rosemary, crushed
Sprigs of Fresh mint (opt)
Sprigs of fresh marjoram (op

Instructions:

For stuffing, cook the chopped onion, chopped celery, and minced garlic in hot oil till tender but not brown.

In a medium mixing bowl stir together the eggs, spinach, parsley, basil, marjoram, and pepper; add onion mixture. Stir in the cheese. Drizzle with water to moisten, tossing lightly. Set aside.

If necessary, remove the fell (pinkish red paper-thin layer) from the surface of meat. Pound meat to an even thickness. Sprinkle with rosemary. Spread the stuffing over the roast. Roll up and tie meat securely.

Place roast, seam side down, on a rack in a shallow roasting pan. Insert a meat thermometer in the thickest potion of meat. Roast, uncovered, in a 325 F oven for 1 1/2 to 2 hours or till meat thermometer registers 150 F.

Let roast stand for 15 minutes before carving. Remove strings. If desired, garnish with sprigs of fresh mint and sprigs of fresh marjoram.

Chopped Liver Recipe

Ingredients:
1 lb Chicken, beef or calf liver (broiled)
4 tablespoons Chicken fat
2 small Onions, diced
3 Eggs, hard cooked
1 teaspoon Salt
1/4 teaspoon Pepper

Instructions:

Wash the liver after broiling.

Heat 2 tablespoons of fat in a skillet and saute the onions. reserve the onions and saute the livers in the remaining fat.

Grind or chop the livers, onions and eggs and mix them to a smooth paste. add the salt and pepper, and additional fat, if desired. blend the mixture well.

Serve on lettuce or as a filling for celery stalks.

English Meatloaf Recipe

Ingredients:
Cooked veal
Boiled ham
Hard boiled eggs
Beef stock

Instructions:

Chop cooked veal and boiled ham.

Place in a well-greased mold alternate layers of veal, ham and hard-boiled eggs. Sprinkle with pepper, mace and chopped parsley.

Moisten with beef-stock and let bake in the oven. Serve cold, sliced very thin, garnished with watercress.

Liver Loaf Recipe

Ingredients:
1/2 lb Veal or pork stew meat
3/4 lb Liver
1/2 lb Bacon, diced
2 Eggs
4 tablespoon Chopped fresh sage
2 tablespoon Minced garlic
1/4 tsp Freshly ground black pepper
1/2 cup Dry white wine

Instructions:

Serve it with sour pickles or brown mustard.

Combine all ingredients in a glass bowl, cover and refrigerate overnight.

The next day, grind the mixture twice using a meat grinder fitted with a large die. Or pulse until well combined, but not too smooth, in a food processor.

Place the mixture in a loaf pan, cover tightly, place the loaf pan in a water bath, and place in preheated 375F oven until done, about 1 1/4 hours.

Remove from the oven, unmold and serve immediately.

Or place the loaf under a 3-pound weight, let cool to room temperature and then chill in refrigerator before serving.

Serve it with sour pickles or brown mustard.
