Ham Wrap Recipe

Ingredients:
8 ounces cream cheese, at room temperature
4 ounces sour cream
1/4 cup minced sweet onion
2 tablespoons minced chives
1 teaspoon garlic powder
1 pound deli sliced ham, sliced thin enough to easily roll into a tube

Instructions:

Blend cream cheese, sour cream, sweet onion, chives, and garlic powder until smooth.

Spread cheese mixture on ham slices. Roll ham slices into logs. Refrigerate at least 1 hour.

Cut ham wraps into thirds for serving as an entree.

Cut into 1-inch thick spirals to serve as an appetizer.

Wrap the ham roll in a leaf of lettuce for a sandwich.

6 servings as an entree, 12 servings as an appetizer

Cheddar Egg Souffle Recipe

Ingredients:
6 eggs, slightly beaten
1 cup shredded cheddar cheese
1/2 cup half and half
2 tablespoon soft butter
1 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Instructions:

Heat oven to 325°F-160°C.

Mix all ingredients. Pour into ungreased baking pan 8″ x 8″ x 2″ or into individual souffle cups.

Bake 25-30 minutes, or until eggs are set.

Serve with crispy bacon.

Carb Count: 2.1 carbs per serving. Serves 3.

Deviled Eggs with Horseradish and Scallions Recipe

Ingredients:
4 large eggs
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 tablespoon finely chopped scallions
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon paprika (optional)

Instructions:

Hard boil the eggs, then cut the eggs in half lengthwise and place the yolks in a small mixing bowl.

Mash the yolks, adding the mayonnaise and mustard, until a smooth paste forms. Stir in horseradish, scallions, salt, and pepper. Using a teaspoon, stuff the egg cavities with the yolk mixture and sprinkle with paprika (optional). Serve at room temperature or chilled.

4 servings.

Cheese Crisps Recipe

Ingredients:
1 cup grated hard cheese
Seasonings (optional): garlic powder, hot pepper powder, cinnamon, etc.

Instructions:

Preheat oven to 350 F.

Toss cheese with any seasonings if desired.

Pile 1 to 4 tablespoons of cheese (depending on the size you want) on a baking sheet covered with a silicone mat or parchment paper oiled on both sides. Flatten the tops so they are in more or less even. There should be at least two inches between smaller mounds, 4 inches between larger ones.

Bake 5 to 6 minutes until they are a light golden brown (they will be a little darker at the edges). Watch as they get brown fast.

If you want to mold them into a shape, you want to “drape” them while still warm. You can make cups over an upturned glass, or “taco shell” shapes by draping over any cylindrical object that is at hand (rolling pin, side of glass)

*Note on type of cheese: Hard cheeses, such as Parmesan, Romano, Asagio, etc, will make a crisp “shell,” whereas cheddar will be more chewy and “lacey” (the fat separates out), though still firm.

Serving Suggestions: Fill with dip, put in salad, spread the flat ones with spread or just eat plain!

Turkey Salad Stuffed Eggs Recipe

Ingredients:
8 eggs
2 celery stalks
2 green onions
1/2 sweet red pepper
3/4 lb leftover cooked turkey
3 tablespoons mayonnaise
2 tablespoons dijon mustard
1 tablespoon cider vinegar
1 packet stevia
1/4 teaspoon salt

Instructions:

Place eggs with enough water to cover in medium-sized saucepan. Bring to a boil; reduce heat to simmer for 10 minutes.

Drain; hold under cold running water to cool. Peel; halve crosswise. Remove yolks and reserve for another use.

Cut celery, green onions, red pepper and turkey into 1-inch cubes. Place in food processor. Whirl with on-off pulses until finely chopped; do not over process. Scrape into medium-size bowl. Stir in mayonnaise, mustard, vinegar, stevia and salt.

Spoon 1 rounded tablespoon into hollow of each egg half. Serve, or refrigerate up to 12 hours.

Hindu Eggs Recipe

Ingredients;
Hard boiled eggs
Butter
Raw eggs
Salt
Pepper
Cayenne
Curry powder
Grated cheese

Instructions:

Slice some hard-boiled eggs and place in a well-buttered baking-dish. Cover with well-beaten raw eggs; sprinkle with salt, pepper, cayenne and curry-powder, a few bits of butter and some grated cheese. Let bake in a moderate oven until done.

Omelette Souffle Recipe

Ingredients:
Yolks 2 eggs
1/2 teaspoon vanilla
6 packets of Stevia blend
Whites 4 eggs
Few grains salt

Instructions:

Beat yolks of eggs until lemon-colored. Add stevia & salt. Cut and fold in whites of eggs beaten until stiff and dry.

Butter a hot omelet pan, pour in one-half mixture, brown underneath, fold gradually, turn on a hot serving dish, and sprinkle with stevia. Cook remaining mixture in same way. Soufflé should be slightly underdone inside.

Crustless Quiche Recipe

Ingredients:
8-10 eggs
½ cup heavy cream or ½ cup shredded cheese (no soft cheeses)
Butter
Salt and Pepper
Additions:   mushrooms, zucchini, asparagus, cheeses, spinach, onion, garlic, fresh herbs, ham, turkey, sausage, bacon, shrimp, crab, etc. etc.

Instructions:

Melt a pat or two of butter into a quiche or pie plate in a 375 ° oven.

Beat 8-10 eggs until they’re pale yellow and frothy. Add salt and pepper to taste. Add ½ cup heavy cream or ½ cut shredded cheese and sale and pepper to taste.   Pour into quiche plate.

Additions. Add lightly cooked fresh veggies (sauté), thawed frozen veggies or spinach (press the water out first), meat and/or cheese.

Pop the quiche into the oven and back for 35 to 40 minutes or until set.

Serve immediately, or cool, cover and store up to three days in the fridge for future breakfasts.

No Crust Artichoke Quiche Recipe

Ingredients:
2 Jars marinated artichoke hearts — (6 oz.)
1/4 pound mushrooms — sliced
1/2 pound Muenster cheese — shredded (2 cups)
1 cup cream
1/2 Teaspoon salt
1/8 Teaspoon pepper
6 eggs

Instructions:

Preheat oven to 350 degrees.

Drain artichokes, reserving marinade. Dice artichokes; set aside.

In skillet on medium heat, heat 2 tablespoons reserved marinade. Add mushrooms and cook until tender, about 5 minutes, stirring occasionally.

Into bottom of quiche dish, evenly distribute artichoke hearts, mushrooms and cheese, then set aside.

In large bowl with wire whisk, beat milk, salt, pepper, eggs and 2 tablespoons reserved marinade. Pour egg mixture over ingredients in dish.

Bake 30 minutes or until knife comes out clean.

Makes 6 servings.

Chicken Deviled Eggs Recipe

Ingredients:
6 hard cooked eggs
1/2 cup finely chopped cooked-chicken
3 tablespoons mayonnaise
1 tablespoon grated onion
1 teaspoon Dijon mustard
1/2 teaspoon dry mustard
3/4 teaspoon hot pepper sauce, to taste
1 tablespoon minced parsley
Paprika, for garnish

Instructions:

Cut eggs lengthwise in half. Remove yolks & place in a small bowl.

Marsh yolks with a fork. Add chicken, mayonnaise, onion, Dijon mustard, dry mustard, hot sauce & parsley. Blend well.

Stuff egg whites with yolk mixture. Sprinkle tops with paprika to garnish.

Cover & refrigerate until serving time.
