Beurre Blanc Sauce Recipe

Ingredients:
1 French shallots, chopped
3 tablespoon white wine vinegar
7 oz. unsalted butter, cubed
Lemon juice

Instructions:

Put the shallots, vinegar and 3 tablespoon water in a pan and bring to the boil. Reduce the heat and simmer until reduced to 2 tablespoons. Remove from the heat, strain into a clean pan and return to low heat.

Whisk in the butter a few pieces at a time. The sauce will thicken as the butter is added until it is the same consistency as cream. Season to taste with salt, pepper and lemon juice.

Good with artichoke, seafood and other vegetable dishes.

Pizza Snack Recipe

Ingredients:
8 oz cream cheese
2 eggs
1 teaspoon garlic powder
1 teaspoon oregano
¼ cup sugar-free pizza sauce or spaghetti sauce
½ cup shredded mozzarella cheese, or combination mozzarella and other cheese such as Parmesan
¼ cup finely minced green pepper or other pizza topping
24 slices of thin-sliced pepperoni, preferably in large thin slices

Instructions:

Heat oven to 350° F.

Put the pepperoni slices into the bottoms of the mini-muffin cups.

Using a mixer, mix the cream cheese until smooth and fluffy. Add eggs, garlic, and oregano, and beat until smooth.

Mix the rest of the ingredients in by hand.

Fill the muffin cups with the egg and cheese mixture.

Bake for about 15-18 minutes, or until lightly browned on top and set in center.

Remove from oven, and cool for a few minutes (5-10), Loosen with a knife and place on a serving plate.

Makes 24 pieces – approximately 1 carb per piece.

Mushrooms with cheese spread inside
Nuts
Pepperoni Chips – Bake pepperoni slices until crisp — great with cheeses and dips
Pork rinds, with or without low-carb dip
Raw veggies and low-carb dip
Ricotta cheese with nuts
Roasted Almonds
Smoked salmon and cream cheese on cucumber slices
Spread low-carb dip or spread on the lunch meat or lettuce and then roll it up

Meals on the Run Recipe

Deli Meat Roll-ups
Take chicken, turkey, beef, ham, pastrami, etc. Take a couple of slices of meat, spread with good mayonnaise or mustard. If desired, top with a thin slice of good cheese, and roll up, jelly-role fashion. Secure with toothpicks. Put three or four or more in a plastic sandwich bag or waxed paper sack.

Food to snack on
2 celery ribs filled with 1 tablespoon of cream cheese with scallions

4 slices of hard salami spread lightly with cream cheese and rolled around a thin scallion.

2 thin slices of boiled or baked ham spread with cream cheese and chives.

2 thin slices of ham spread with spicy mustard and rolled up with thin slices of cheese.

Fresh carrot, celery, cucumber, bell pepper or zucchini sticks.

Bag of nuts – 1/4 cup roasted sunflower seeds, walnuts, macademia nuts pecans, etc.

Natural jerky – to make natural jerky. (If you buying ready made, be sure that it doesn’t contain MSG, or nitrates.)

Stuck in a Convenience Store Eating

Stuck in a Convenience Store

When you aren’t able to prepare your own meals, when in a bind such as a road trip, or near-famished state…..

Head for the refrigerated deli section. Lunchables are a great combo – just toss the crackers and have a meat and cheese spread. You can also find lean meat lunchables such as turkey. Find a packet of mustard to go with it.

Grab a microwaveable egg sandwich, remove the biscuit bun.

Go for the nuts and get some almonds, or macadamia nuts.

Look for cheese sticks.

Find beef jerky sticks, including beef and cheese combinations.

READ THE LABELS OF EVERYTHING YOU EAT. Make sure the ingredients satisfy your dietary needs.

Natural Jerky Recipe

Ingredients:
Flank steak, or hanger steak
Dehydrator

Instructions:

Ask your butcher to thinly slice flank stead or hanger steak. Marinate the meat in about 1 cup pepper-blend steak sauce plus a little chopped fresh garlic and salt and pepper.

Lay the thin slices of meat onto the dehydrator trays, leaving room for air to circulate, and dry overnight (at least 8 hours).

Store in zip-closure bag.

Carbs = 0

Egg Quiche Recipe

Ingredients:
10 Eggs, slightly beaten
2 green peppers chopped
2 teaspoon parsley flakes
1 teaspoon oregano
Salt and pepper to taste
2 cup diced cooked turkey or chicken
2 tablespoons onion flakes
2 teaspoons dried chili pepper flakes
1/2 teaspoon garlic powder

Instructions:

Beat eggs lightly and stir in remaining ingredients. Blend in well. Pour mixture into 8 in pam sprayed cake pan and bake in preheated 350 oven for 30 minutes or until set.

Cut into wedges and serve hot or cold.

Baked English Recipe

Ingredients:
6 eggs, beaten
3/4 cup cream
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 cup cheddar cheese, shredded
1 green onion, slice thin
3 slices bacon, cooked; crumbled
1 tablespoon butter
1 tablespoon parmesan
Additional bacon for garnish – optional

Instructions:

Beat cream into eggs. Stir in seasonings, cheddar, onion and bacon.

Melt butter in a 9″ frying pan. Pour egg mixture into pan. Sprinkle with Parmesan. Bake at 400~ for 20 minutes or until set and golden.

Garnish with additional bacon, if desired. Serve immediately.

Foamy Omelete Recipe

Ingredients:
4 eggs
1/2 teaspoon salt
4 tablespoon cream
1 tablespoon butter
Pinch of pepper

Instructions:

Beat yolks of eggs, add seasonings and milk. Beat whites until stiff, but not dry.

Place skillet on large burner, add butter, set to medium high heat. Just as soon as butter is melted, lower to low heat. Have bottom and sides of skillet well greased.

Fold the stiffly beaten egg whites into yolk mixture. By this time, the pan should be very hot. Pour in omelet, spread evenly, and cook slowly until omelet is set.

Place omelet in oven,which has been preheated to 375 degrees to dry slightly on top. Turn out and serve at once.

Finely minced ham, grated cheese or finely chopped parsley may be folded into mixture if desired.

Serves 4.

Chicken Lasagna Recipe

Ingredients:
1/2 cup chopped onion
1/2 cup diced green pepper
1/2 lb sliced fresh mushrooms
1 can chicken soup
1/2 cup cream
3 chicken breasts, cooked and chopped up into bite size pieces
3-4 small zucchini sliced thin
2 cup cheddar cheese
1-1/2 cup cottage cheese
1/2 cup parmesan cheese
1 teaspoon olive oil
Garlic powder
Salt & Pepper to taste.

Instructions:

Saute onion, green peppers and mushrooms in 1 teaspoon of olive oil. Add chicken soup and cream. Mix together cottage cheese and parmesan cheese.

Put chicken pieces in bottom of oval or square oven dish. Salt & pepper. Sprinkle with garlic powder. Layer zucchini slices. Cover with cottage cheese mixture. Then put cheddar cheese on. Add veggie sauce and cover.

Bake at 350 degrees for 45 minutes covered. Take off cover and cook another 20 to 30 minutes until zucchini is cooked completely.
