Cheddar Cheese Dip Recipe

Ingredients:
2 tablespoons olive oil
1 pound sharp cheddar cheese, shredded
1 cup sour cream
1 egg
1 teaspoon dry mustard

Instructions:

Place olive oil in top of double boiler and add cheese. Place over simmering water and stir until cheese begins to melt.

Add sour cream gradually, stirring constantly until cheese is melted and mixture is smooth.

Beat the egg. Stir in the egg, mustard and paprika.

Serve while still warm with celery, green peppers, mushrooms, cucumbers, radishes, asparagus or raw or lightly steamed green beans or cauliflower.

Oyster Salad Recipe

Ingredients:
Pint oysters
Two eggs
1/4 cup cream
1/4 cup vinegar
Half teaspoon of mustard
Celery seed
Salt
1/10 teaspoon cayenne
Tablespoon butter

Instructions:

Beat two eggs well and add to them cream and vinegar, celery seed, salt, and cayenne, and a tablespoonful of butter.

Put all in a double boiler and cook until it all is as thick as soft custard (about six minutes), stirring constantly. Take from the fire.

Heat the oysters in their own liquor to a boiling point then drain and add the dressing, mixing lightly.

Set away in cold place until needed.

Serves four.

Vermont Spinach Recipe

Ingredients:
1/2 lb Spinach
1 small Bermuda onion; sliced
1/4 cup Celery; diced
1/4 cup Olive oil
2 tablespoon Tarragon vinegar
1 1/2 teaspoon Salt
1 small Clove of garlic; pressed
1/4 teaspoon Ground pepper
Optional: 4 Eggs; hard-cooked, diced

Instructions:

Tear spinach into bite size pieces, arrange in salad bowl. Add onion and celery. Chill.

Toss spinach mixture with oil until leaves are well coated.

Combine vinegar, salt, garlic, pepper and , blending well. Pour over spinach mixture, add eggs. Toss well, serve immediately.

Chicken Salad With Cheese Recipe

Ingredients:
Lettuce
Sprouts
2 hard boiled eggs
Shredded cheddar cheese
Small pieces of chicken cut into chunks
Black olives

Instructions:

Toss and add salad dressing.

Chicken Salad Recipe

Ingredients:
2 cups cold cooked chicken
2 cups celery cut fine
Salad dressing
Lettuce
1 hard boiled egg

Instructions:

Cut chicken in small pieces and mix with celery and salad dressing. Arrange on lettuce leaves and garnish with dressing and egg thinly sliced.

Cabbage and a little celery salt may be used in place of celery

Serves four.

Cobb Salad Recipe

Ingredients:
3 large eggs, hard boiled
3 slices bacon
5 ounces Boston lettuce
10 ounces cooked chicken, cubed
6 ounces cheddar cheese, cubed
1 avocado, diced
1/3 cup oil and vinegar salad dressing, or Balsamic Dressing

Instructions:

In a medium pot hard boil the eggs for 10 minutes,drain, rinse in cold water and drain again.

In skillet cook diced bacon until crisp; drain on a paper towel and set aside. Keep 2 tablespoon of the bacon fat from skillet.

Peel & dice eggs, set aside.

Separate lettuce into leaves & arrange over serving platter. Arrange chicken cubes, cheese cubes, diced avocado, eggs & bacon over the lettuce.

Stir reserved bacon fat into the dressing & drizzle half on the salad.

Bacon and Egg Salad Recipe

Ingredients:
10 slices bacon
4 hard-boiled eggs
2 tablespoon Worcestershire sauce
1/2 cup olive oil
1/4 cup lemon juice
1 head of lettuce
1 green pepper
2 stalks celery — chopped

Instructions:

Cook the bacon until brown and crispy. Drain and crumble.

Quarter the eggs.

Blend Worcestershire sauce, oil, and lemon juice. Set aside.

Wash and drain lettuce. Chop green pepper. Mix lettuce (which has been broken into bite-size pieces) with the celery, green pepper, bacon, and eggs.

Pour dressing over all and toss lightly.

Caesar Salad Recipe

Ingredients:
1 head Romaine Lettuce (washed)
4 cloves Garlic
1 teaspoon Tabasco Sauce
2 teaspoon Worcestershire Sauce
1 teaspoon Dijon Mustard
1 Egg
2 teaspoon Black Pepper
1 oz Grated Parmesan or Romano Cheese
1 oz Shaved wedge Parmesan or Romano Cheese (optional)
1/4 cup Extra Virgin Olive oil
Grilled chicken breast or bacon (optional)

Instructions:

Wash the lettuce, and break into bit sized pieces.

Peel the Garlic. In a blender, add the garlic, mustard, Tabasco, Worcestershire, egg, black pepper and olive oil. Blend until the Garlic is chopped and thoroughly mixed with the rest of the dressing.

Pour the dressing over the lettuce and toss until all leaves are coated. Add bacon or chicken breast if desired. Add the shaved parmesan or romano on top and serve.

Chicken Pate Recipe

Ingredients:
2 lb skinned/boned breast chicken
2/3 cup white part only leek
1/4 cup shallots
3/4 cup unsalted butter
3 eggs whites only
1 1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/8 teaspoon freshly grated nutmeg
2 1/4 cup well-chilled whipping cream
1/2 cup chicken broth
2 cup tight-packed leaves spinach
2 cup tight-packed leaves basil
3/4 cup well-chilled whipping cream

Instructions:

Cut chicken into 1/2-inch pieces. Puree in processor in 2 batches to very smooth paste. Refrigerate until well chilled, at least 1 hour.

Meanwhile, thinly slice leek and shallot. Melt butter in heavy small skillet over low heat. Add leek and shallot and cook until soft, stirring occasionally, about 15 minutes. Cool.

Combine half of chicken with half of leek mixture in processor. Puree until smooth. Add half of egg whites and process until smooth. Transfer to bowl. Repeat with remaining chicken, leek mixture and egg whites. Refrigerate until well chilled.

Blend half of chicken mixture, salt, pepper and nutmeg in processor. With machine running, slowly pour 1 cup plus 2 tablespoons cream through feed tube. Blend 1 minute. Transfer to large bowl.

Repeat with remaining chicken, salt, pepper, nutmeg and 1 cup plus 2 tablespoons cream.

Combine both chicken mixtures.

Bring chicken broth to boil in large skillet. Add spinach and basil and toss until just wilted, about 45 seconds. Drain well. Squeeze out any remaining liquid. Puree spinach mixture with remaining 3/4 cup cream until smooth. Blend in 1/4 of chicken mixture.

Preheat oven to 350F.

Line 9×5-inch loaf pan with plastic wrap, leaving 5-inch overhang. Pour half of white chicken mixture into pan. Cover with half of spinach mixture. Using knife, swirl through layers to create marble effect.

Repeat with remaining chicken and spinach. Tap pan on work surface to settle pate. Fold overlapping plastic over top of pate. Cover pan tightly with foil.

Place loaf pan in deep roasting pan. Pour enough water into roasting pan to come 2/3 up sides of loaf pan.

Transfer to oven and bake 1 1/4 hours. Cool. Weight pate with heavy object and refrigerate overnight. Unmold pate onto platter. Let stand at room temperature 1 hour before serving.
