Buffalo Wings Recipe

Ingredients:
1 egg
1/2 cup olive oil
1 cup cider vinegar
1 teaspoon salt
1/2 teaspoon pepper
cayenne pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
2 pounds chicken wings

Blue Cheese Dunking Sauce:

1 cup mayonnaise
1/2 cup sour cream
1 green onion, chopped
1 garlic clove, pushed through a press
1 tablespoon lemon juice
1/4 cup crumbled blue cheese
Combine all ingredients. Mix well.

Instructions:

Heat oven to 450 degrees F. Beat egg in a medium bowl. Add oil and beat until combined. Add vinegar, salt, pepper, cayenne, garlic, powder, and celery salt, stir until well combined.

Cut chicken wings in half at joint; remove wing tips and discard. Dip chicken pieces into marinade and arrange on a large baking pan.

Bake 20 minutes, turning and brushing with marinade several time, until wings are crisp. Remove from oven, drain and arrange on a warm platter. Serve with Blue Cheese Dunking Sauce.

Chicken Pate Recipe

Ingredients:
2 lb skinned/boned breast chicken
2/3 cup white part only leek
1/4 cup shallots
3/4 cup unsalted butter
3 eggs whites only
1 1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/8 teaspoon freshly grated nutmeg
2 1/4 cup well-chilled whipping cream
1/2 cup chicken broth
2 cup tight-packed leaves spinach
2 cup tight-packed leaves basil
3/4 cup well-chilled whipping cream

Instructions:

Cut chicken into 1/2-inch pieces. Puree in processor in 2 batches to very smooth paste. Refrigerate until well chilled, at least 1 hour.

Meanwhile, thinly slice leek and shallot. Melt butter in heavy small skillet over low heat. Add leek and shallot and cook until soft, stirring occasionally, about 15 minutes. Cool.

Combine half of chicken with half of leek mixture in processor. Puree until smooth. Add half of egg whites and process until smooth. Transfer to bowl. Repeat with remaining chicken, leek mixture and egg whites. Refrigerate until well chilled.

Blend half of chicken mixture, salt, pepper and nutmeg in processor. With machine running, slowly pour 1 cup plus 2 tablespoons cream through feed tube. Blend 1 minute. Transfer to large bowl.

Repeat with remaining chicken, salt, pepper, nutmeg and 1 cup plus 2 tablespoons cream.

Combine both chicken mixtures.

Bring chicken broth to boil in large skillet. Add spinach and basil and toss until just wilted, about 45 seconds. Drain well. Squeeze out any remaining liquid. Puree spinach mixture with remaining 3/4 cup cream until smooth. Blend in 1/4 of chicken mixture.

Preheat oven to 350F.

Line 9×5-inch loaf pan with plastic wrap, leaving 5-inch overhang. Pour half of white chicken mixture into pan. Cover with half of spinach mixture. Using knife, swirl through layers to create marble effect.

Repeat with remaining chicken and spinach. Tap pan on work surface to settle pate. Fold overlapping plastic over top of pate. Cover pan tightly with foil.

Place loaf pan in deep roasting pan. Pour enough water into roasting pan to come 2/3 up sides of loaf pan.

Transfer to oven and bake 1 1/4 hours. Cool. Weight pate with heavy object and refrigerate overnight. Unmold pate onto platter. Let stand at room temperature 1 hour before serving.

Sesame Beef Kabobs Recipe

Ingredients:
12 ounces beef flank streak
2 tbs. soy sauce
2 tablespoons toasted sesame oil
2 green onion, sliced
1/2 pack Stevia blend
1-1/2 teaspoons dry sherry (optional)
2 cloves garlic, minced
1/2 teaspoon sesame seeds
2 small red sweet pepper
4 limes, each cut in half
3/4 cup fresh snap pea pods, trimmed (30)
30 Grape tomatoes

Instructions:

Trim fat from meat. Make diagonal cuts at 1 inch intervals.

In a bowl, combine soy sauce, sesame oil, green onion, stevia, sherry (optional), garlic, sesame seeds and crushed red pepper. Poor over meat and put in plastic bag in a shallow dish. Marinate in refrigerator 4-24 hours. Turning bag occasionally.

Grill steak uncovered for 12 to 14 minutes or until medium done (160 F). Turning once half-way through grilling.

While meat is grilling, add sweet peppers and lime to grill. Grill for 4-5 minutes or until lightly charred, turning once.

In small saucepan, cook pea pods in a small amount of boiling water for 2-4 minutes or until crisp tender, drain.

To serve, thread meat pieces, sweet pepper pieces, snow pods, and tomatoes onto wooden skewers. Sprinkle with additional sesame seeds and serve with the grilled lime wedges.

Carbs per serving: 2. Servings: 30.

Ham Salad Recipe

Ingredients;
3 cups coarsely ground ham
2 hard-cooked eggs, chopped
1/2 cup chopped celery
1/2 cup mayonnaise
2 teaspoons prepared mustard
1/8 teaspoon black pepper

Instruction:

In medium bowl stir together all ingredients.

Makes about 3 3/4 cups, enough for 6 sandwiches.

Ham Roll Ups Recipe

Ingredients:
8 oz sliced ham (1 package)
1 bunch green onions, whole
8 oz cream cheese, softened (1 package)

Instructions:

Spread sliced ham with cream cheese. Lay 1 onion along each slice edge and roll up. Chill until cheese is firm. Slice into 3/4-inch pieces and arrange upright on plate. Recipe can be doubled or tripled. Makes 24 appetizer servings.

Deviled Ham Recipe

Ingredients:
1 1/2 cup cubed, cooked ham, trimmed
1/4 cup cubed firm fat from cooked ham
1 1/2 teaspoon horseradish mustard or other hot mustard
2 teaspoon white wine vinegar
Big pinch grated nutmeg
Small pinch ground cloves
4 Drops bottled hot pepper sauce
1/4 teaspoon anchovy paste
1/8 teaspoon finely minced garlic
Big pinch ground pepper
Big pinch ground ginger
Big pinch ground thyme

Instructions:

Grind the ham and fat fairly fine, either in a food processor or, in two batches, in an electric blender.

If using a processor, add the remaining ingredients at once and process until the mixture is rather like a coarse pate. If using a blender, scrape the first batch of ground ham into a bowl, add the seasonings, process the rest of the ham, and combine with the mixture in the bowl. If too coarse, process again in two batches.

Taste for seasoning, then pack into a jar, cover, and refrigerate overnight or longer to let the flavors mingle. The spread will keep for up to 2 weeks.

Makes about 1 1/2 cups

Bacon Cheese Dip Recipe

Ingredients:
16 slices bacon (about 12 ounces), diced, fried and well drained
16 ounces cream cheese, cubed, room temperature
4 cups shredded cheddar cheese
1 cup cream
2 teaspoons Worcestershire sauce
1 teaspoon dried minced onion
1/2 teaspoon dry mustard
1/2 teaspoon salt
Dash hot sauce

Instructions:

Put all ingredients in the slow cooker; cover and cook on low, stirring occasionally, for about 1 to 2 hours, until cheese is melted and mixture is hot.

Taste and adjust seasonings, add bacon, and keep on low to serve. Serve with with veggie dippers.

Freezer Log Recipe

Ingredients:
1/2 lb Sharp Cheddar cheese
8 slices Cooked bacon
1/2 teaspoon Worcestershire sauce
1 teaspoon Dry mustard
2 teaspoon Mayonnaise

Instructions:

Combine in food processor – 1/2 lb. sharp yellow cheese, 8 slices bacon, 1/2 teaspoon Worcestershire sauce, 1 teaspoon. dry mustard, 2 teaspoons mayonnaise.

Blend until bacon is minced. Form into a log shaped like party rye bread.

Wrap in plastic wrap or foil and freeze till firm. To serve, slice.

Ham and Cheese Ball Appetizer Recipe

Ingredients:
1 pack smoked ham (3 oz.)
Cream cheese 8 oz.
1 jar Old English sharp cheddar cheese
1 teaspoon onion powder
1 pack nuts (almonds, brazil nuts, macadamia, walnuts)

Instructions:

Soften cheese to room temperature. Sprinkle some of the onion powder over thinly sliced ham, and set aside. Mix cheese and remainder of onion powder. Chop ham finely, put nuts in blender. Cover cheese ball with nuts and refrigerate.

Ukranian Liver Pate Recipe

Ingredients:
1 lb liver
2 onions, large. thinly sliced
1 egg
1/2 cup chicken stock
1/3 cup butter
1 teaspoon salt
1/4 teaspoon black pepper

Instructions:

Melt the butter in a skillet. Add the onions and fry until they are turning golden.

At this point add the liver which has been sliced into thin strips and cook for 10 minutes & remove form heat.

Mix all of the ingredients with the onions and liver in a food processor. Chop in processor until a smooth textured mixture is achieved. Grease a 9″ baking dish and spoon the mixture into it.

Bake for 45 minutes in a pre-heated 450 degree F oven. Remove from oven and cool to room temperature.

Note: This mixture may be turned into metal molds for baking or into individual custard cups as well.
