Cauliflower Soup Recipe

Ingredients:
1 large head of cauliflower
2-3 stalks celery
2 cloves garlic
1-2 onions
1-2 teaspoon ground cumin
1/2 teaspoon pepper
a few sprigs of parsley
1/4 teaspoon sage (or your favorite blend of herbs; spices)

Instructions:

Chop head of cauliflower (save a handful of tiny flowerettes for a raw garnish) and put in a soup pot. Chop; add stalks celery, garlic and onions. Add spices.

Barely cover with water, bring to boil and simmer until veggies are tender.

Blend the contents of the pot and adjust seasonings to taste. Add a little hot water if the soup is too thick.

Serve garnished with raw flowerettes.

Cauliflower Souffle Recipe

Ingredients:
1/2 cup steamed, mashed cauliflower
4 eggs
1/4 cup cottage cheese (or ricotta)
2 tablespoons grated cheddar cheese
Pinch of nutmeg
Dash of cloves
Salt, pepper to taste
Onion/garlic (optional)

Instructions:

Mix all ingredients together, bake for 20 minutes at 350 degrees. If you use 1/4 cup of heavy cream instead of the cottage/ricotta cheese, it will be more like a quiche than a soufflé.

Caesar Salad Dressing Recipe

Ingredients:
1 egg
2 tablespoon white wine or tarragon vinegar
2 teaspoon Dijon mustard
2 anchovy fillets, chopped
1 clove of garlic, crushed
1/2 cup oil

Instructions:

Cook the egg in boiling water for about 1 minute. Break the egg into a small bowl and add the wine or vinegar, mustard, anchovy and garlic. Mix together using a wire whisk. Add the oil in a thin stream, whisking continuously until the mixture is smooth and creamy. Keep, covered, in the fridge for up to 2 days.

Makes about 3/4 cup.

Cabbage with Bacon Recipe

Ingredients:
Bacon slices
Cabbage
Small onion
Pepper

Instructions:

Boil the cabbage, press the water from it and chop it up.

Dice the bacon and put into a frying pan. Add a small finely chopped onion, and fry a few minutes.

Put in 2 cups of cooked cabbage, sprinkle with pepper. When hot, serve.

Serves four.

Brussel Sprouts and Bacon Recipe

Ingredients:
1 pound fresh Brussel sprouts
½ pound bacon
¼ cup chopped onion
2 tablespoons butter
Salt and pepper to taste

Instructions:

Cut Brussel sprouts in half, then steam until crisp tender (cut sprouts will separate if boiled).

Fry bacon until crisp, reserving ¼ cup grease; drain, cool and crumble.

Saute onions in bacon grease until wilted and golden brown.

Add butter and Brussel sprouts and cook until sprouts are hot. Add cooked crumbled bacon, season with salt and pepper to taste.

Serves 4-6

Broccoli with Garlic and Lemon Recipe

Ingredients:
1 bunch broccoli, about 1 pound
1/4 cup extra virgin olive oil
3 garlic cloves, cut into thin slivers
1/8 teaspoon pepper
3 tablespoon fresh lemon juice

Instructions:

Cook broccoli in a large saucepan of boiling water 5-6 minutes, or until crisp but tender. Drain in a colander. Arrange on a serving dish and cover to keep warm.

In a small frying pan, warm olive oil over low heat. Stir in garlic and cook slowly until golden brown, be careful not to burn the garlic, about 1-2 minutes. Add pepper and lemon juice.

Pour over broccoli.

Vegetable Cream Soup Recipe

Ingredients:
1 lb. cauliflower
1 1/2 lbs. broccoli
2 tablespoon extra-virgin olive oil
2 cloves garlic, minced
10 cups vegetable stock
1 teaspoon salt
1 tablespoon dijon mustard
1 teaspoon dried tarragon leaves
Sea salt and freshly ground black pepper, to taste
Heavy cream, optional

Instructions:

Trim the broccoli and cauliflower and chop coarsely. Be sure to use the core of the cauliflower and the broccoli. Save a few tiny florets of broccoli to add later.

In a large pot, heat the oil over medium heat. Add the garlic and sizzle until it smells fragrant.

Add the broccoli, cauliflower, stock, and salt.

Bring to a boil, turn down and cook at a lively simmer until the vegetables are tender, about 20 minutes.

Puree in batches in a food processor or blender—a blender works best for this—with the mustard and tarragon. Add the broccoli florets and season to taste.

Thin with stock or water if the soup is too thick. Add the cream if desired.

Makes 12 cups.

Baked Broccoli Recipe

Ingredients:
2 packages frozen broccoli spears
1 cup sour cream
1/2 cup grated cheddar cheese
1 tablespoon lemon juice
1/2 teaspoon grated lemon rind
Salt and pepper
Paprika

Instructions:

Cook broccoli according to package directions and drain well. Place in shallow baking dish.

Combine remaining ingredients; spoon over broccoli. Sprinkle with paprika.

Bake in 350°F oven for 20 minutes.

Asparagus in Cream Sauce Recipe

Ingredients:
1-1/2 pounds fresh asparagus, trimmed and cooked
3/4 cup sour cream
2 eggs, slightly beaten
1/2 teaspoon lemon juice
Dash cayenne pepper – to taste
Salt & white pepper – to taste
Dash paprika – to taste

Instructions:

Arrange asparagus in one or two layers in an oven-proof baking dish. Please in a warm oven about 200 degrees F to heat while making sauce

Boil about 1 inch of water in the bottom of a double-boiler.

Whisk together sour cream and eggs in cold pan. Place over the boiling water, taking care that the water does not touch the top pan and stir in the lemon juice and cayenne.

Cook while whisking until the sauce thickens. Season lightly with salt and white pepper.

Pour sauce over asparagus, sprinkle lightly with paprika, and serve.

Low Carb Waffles Recipe

Ingredients:
4 large eggs
2 tablespoons heavy cream
2 tablespoons water
2 teaspoon vanilla extract
4 packets Stevia
2 or 3 ounces of crushed pork rinds
1/2 teaspoons ground cinnamon
3 Tablespoons melted butter
Beat the eggs then add the cream, water, and vanilla extract and beat some more.

Instructions:

Mix the Stevia with the cinnamon and then add that to the eggs. (Mixing the cinnamon with the Stevia before adding helps to keep the cinnamon from clumping up).

When well blended mix in the ground pork rinds.

Let the mixture sit for a couple of minutes until it thickens. Then stir and check the consistency. It should be quite thick, but not to thick to spoon easily. If too thick, add a little water. If too thin, add a little bit more pork rinds. Just before you’re ready to put into waffle iron, stir in about 2/3 of the melted butter.

Brush the waffle baker with about half of the remaining melted butter, then spoon in about 1/4 to 1/3 of a cup of batter on each side of the bottom half waffle maker and used a spoon to spread the batter out a little.

Close the top of the waffle maker. Takes bout 5 or 6 minutes to bake the waffle.

These waffles firm up and brown just like “real” waffles. Serve with butter.
