Simple, delicious and low carb.
6 oz Red Snapper filet (or other firm white fish)
4 medium crimini mushrooms, sliced
6 marinated artichoke quarters, sliced
Sauté mushrooms and artichokes in butter until soft. Remove from pan and set aside.
Dredge fish in flour and fry in same pan (additional butter will be needed) until fully cooked.
Return mushrooms and artichokes to pan in last 2 minutes. Serve over fish.
