Ingredients:
1/3 cup orange juice
2 tbsp vinegar
1/3 cup light olive oil
1/2 tsp. finely grated orange rind
2 tsp. whole grain mustard

Instructions:

Put ingredients in a small screw-to jar. Season with salt and cracked black pepper and shake until well blended.

Will keep, covered, in the refrigerator for up to 2 days. Makes about 2/3 cup.
