These “fries” have about 1/5th the carbs of french fried potatoes, 50% more fiber and plenty of taste.


1 large – Jicama peeled
2 Tbsp – avocado oil


Preheat oven to 400 degrees.
Peel the jicama and slice into 1/4″ sticks.
In a large pot, bring water to boil. Boil jicama sticks for 15 – 20 minutes until al dente.
Drain and cool.
Toss jicama sticks in oil.
Arrange in single layer on parchment paper covered baking sheet.
Cook for 15 minutes, flip and cook another 15 minutes.

Season with your favorites – I’m a simple salt, pepper, cumin guy, but use whatever you like.
