Asian Stir Fried Broccoli Recipe

Ingredients:
1 bunch broccoli, cut into florets, stem peeled and chopped
1 tablespoon oil
2 cloves garlic, minced, grated, or pressed
2 teaspoons grated fresh ginger
2 tablespoons soy sauce
1 tablespoon dry sherry
2 teaspoons sesame oil
1 packet Stevia
3 tablespoons toasted slivered almonds

Instructions:

Lightly steam broccoli in a covered container in small amount of water for 3 minutes.

If the almonds aren’t toasted, you can do that in the skillet you’re going to use for the broccoli – either in a dry pan or a small amount of oil.

Combine soy sauce, sesame oil, sherry, and sweetener.

Heat the oil in a wok or large skillet.

Stir-fry the broccoli in hot oil for 1-2 minutes, until almost tender. Push to the edges of the pan.

Put ginger and garlic in the center of the pan (add a little more oil if need be), and saute 30-60 seconds, until fragrant.

Put sauce in the pan, and toss all ingredients together. Top with almonds.

Asparagus Frittatta Recipe

Ingredients:
2 teaspoons olive oil
1 small onion, thinly sliced
1/2 teaspoon salt
1 pound asparagus, tough ends snapped off, spears cut diagonally into 1-inch lengths
4 large eggs, lightly beaten
1 cup shredded Gruyere or Swiss cheese

Instructions:

Heat olive oil into a 10-inch oven-proof frying pan over medium high heat. Add onions and salt and cook, stirring occasionally, until onions are softened, about 3 minutes.

Add asparagus, reduce heat to medium-low, and cook, covered, until the asparagus are barely tender, 6 to 8 minutes.

Pour in eggs and cook until almost set, but still runny on top, about 2 minutes. While cooking, pre-heat the oven broiler.

Sprinkle cheese over eggs and put in oven to broil until cheese is melted and browned, about 3 to 4 minutes.

Remove from oven and slide frittata onto a serving plate. Cut into wedges.

Serves 4.

Asparagus with Lime and Mint Recipe

Ingredients:
1 lb. of asparagus, trimmed
1 1/2 tablespoons of olive, sunflower, or grapeseed oil
1-2 fresh limes – 1 1/2 tablespoons of juice
1 teaspoon of fresh mint, chopped or cut in a chiffonade*
Kosher salt
Fresh ground pepper

Instructions:

Heat the oil in a sauté or frying pan on medium-high. When the oil is hot, add the asparagus and sprinkle with salt and pepper to taste, cooking for about 5 minutes until fragrant.

Put on a plate and squeeze lime juice over the asparagus and sprinkle on the mint.

Serves 4.

Carb Count: 4 carbs per serving.

*To chiffonade mint, stack a few leaves and roll them up like a cigar. Using a knife, cut leaves starting at one end, making your way down the roll. This will make thin slices.

Braised Celery Recipe

Ingredients:
1 head celery
1 medium onion
1 teaspoon chopped parsley
2 slices bacon
10 fl oz vegetable stock
1 Salt and pepper, to taste
2 tablespoons butter

Instructions:

Clean celery, cut into one-inch pieces and place in a casserole dish.

Finely chop bacon and onion and sprinkle over celery along with chopped parsley. Pour on stock. Dot with knobs of butter.

Cover dish and bake in a moderate oven for 30-45 minutes.

Broccoli Cheddar Bake Recipe

Ingredients:
4 cups chopped fresh broccoli
1/2 cup finely chopped onion
2 tablespoons water
2 eggs
2/3 cup sour cream
1 cup shredded cheddar cheese
1/2 teaspoon ground black pepper

Instructions:

Preheat the oven to 350 F.

Lightly coat a baking dish with butter.

In a skillet, combine the broccoli, onion and water. Saute over medium-high heat until the vegetables are tender, about 5 to 8 minutes. (Keep adding water to prevent the vegetables from drying out). Drain and set aside when the broccoli is done.

In a bowl, combine the eggs, sour cream and 3/4 cup cheese. Add in the broccoli mixture and pepper. Stir and mix well.

Transfer into the prepared baking dish.

Set the baking dish into a large pan filled with about 1 inch of water.

Bake uncovered until a knife inserted in the center comes out clean, about 45 minutes.

Remove from the oven and top with the remaining 1/4 cup shredded cheese. Let stand about 10 minutes before serving.

Broccoli Frittata Recipe

Ingredients:
4 eggs
1 cup broccoli florets, cooked
1 large onion, thinly sliced
1/2 lb mushroom caps, thinly sliced
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
4 tablespoons butter
3 tablespoons grated Parmesan cheese
1 teaspoon baking soda
Minced parsley for garnish

Instructions:

Put 2 tablespoons butter in an oven-proof skillet. Saute onions and mushrooms until golden; remove from stove.

Put eggs, baking soda, salt and pepper in bowl and thoroughly beat. Add onions, mushrooms and broccoli; mix well.

Add remaining butter to skillet and pour in egg mixture. Tilt pan to cover bottom with mixture. Fry on top of stove until eggs start setting. Sprinkle cheese on top; place pan under broiler and brown.

Cut into wedges and serve; garnish with parsley.

Serves 6

Broccoli with Garlic Butter Recipe

Ingredients:
1 bunch broccoli, cut into flowerets
2 tablespoon unsalted butter
1 tablespoon olive oil
2 clove garlic, minced
1/2 teaspoon dried rosemary
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup grated parmesan cheese

Instructions:

In a large saucepan, bring a small amount of water to a boil over high Heat. Place Broccoli in a steamer basket and place basket in the pan. Cover and steam Just until crisp-tender, about 5 minutes.

Drain well and set aside. In a large nonstick skillet, heat butter and oil over medium-high Heat. Add Garlic and rosemary, saute for 1 minute.

Add broccoli to skillet; stir to coat with the butter mixture. Cook until heated through, about 1 to 2 minutes.

Season With salt and pepper. Place broccoli in serving dish. Sprinkle with Parmesan cheese and serve Immediately.

Serves 6.

Brussel Sprouts with Lemon Recipe

Ingredients:
1 Tbsp freshly squeezed lemon juice, plus 1 Tbsp grated lemon zest
1 lb brussels sprouts
1 Tbsp olive oil
4 teaspoons butter
1 garlic clove, minced
1 Tbsp black mustard seeds or poppy seeds
2 Tbsp dry white wine
Salt and pepper to taste

Instructions:

Put lemon juice in a large bowl.

Cut bottoms off sprouts. Halve sprouts lengthwise. Thinly slice the sprouts.

Transfer slices into bowl with lemon juice. Toss them in juice and separate leaves.

Heat oil and butter over high heat in a skillet large enough to hold all sprouts. When very hot add sprouts, garlic and seeds, and cook, stirring often, until sprouts are wilted and lightly cooked, but still green and crisp. Takes about 3 to 4 minutes. Some leaves might brown slightly.

Add white wine, and sprinkle with salt and pepper. Cook, stirring, 1 minute more.

Turn off heat, add salt and pepper to taste and stir in the lemon zest, reserving a little for top of dish.

Transfer to a serving bowl, sprinkle with remaining zest and serve.

Serves 4.

Cabbage and Pepper Saute Recipe

Ingredients:
1/2 small head of cabbage (approximately 4 cups chopped)
1 medium red Bell pepper, chopped
2 teaspoons paprika
1/2 teaspoon garlic (or one clove garlic, minced or pressed)
1 teaspoon caraway seeds
Salt and pepper
Oil to coat pan

Instructions:

Heat oil in pan. Saute’ pepper for a minute or two, then add cabbage. After another minute, add the seasonings.

Cook until vegetables are tender. If the pan gets too dry as it cooks, add a little white wine, chicken stock, or water.

Cheese Spinach Recipe

Ingredients:
1/2 cup grated gruyere cheese
1/2 cup ricotta cheese
1/4 cup crumbled blue cheese
2 tablespoon freshly grated Parmesan cheese
2 tablespoon chopped fresh dill
1 large egg yolk
2 tablespoon extra-virgin olive oil
2 10 oz. packages of fresh spinach, coarsely chopped.

Instructions:

Preheat the broiler to medium. Lightly butter 11-by 7-by 2-inch baking dish.

Mix the cheeses, dill and egg yolk in a large bowl.

Heat oil in a large pot over medium-high heat, and then add the garlic. Stir for a minute until fragrant.

Pour into the prepared baking dish. Add the spinach to the pot and sauté until wilted. Transfer spinach to strainer; drain well.

Pour over the garlic in the baking dish. Toss to coat with the oil and spread out evenly.

Sprinkle with cheese mixture. Broil until cheese is golden on top, and the spinach is heated through.
