Brussel Sprouts with Lemon Recipe

Ingredients:
1 Tbsp freshly squeezed lemon juice, plus 1 Tbsp grated lemon zest
1 lb brussels sprouts
1 Tbsp olive oil
4 teaspoons butter
1 garlic clove, minced
1 Tbsp black mustard seeds or poppy seeds
2 Tbsp dry white wine
Salt and pepper to taste

Instructions:

Put lemon juice in a large bowl.

Cut bottoms off sprouts. Halve sprouts lengthwise. Thinly slice the sprouts.

Transfer slices into bowl with lemon juice. Toss them in juice and separate leaves.

Heat oil and butter over high heat in a skillet large enough to hold all sprouts. When very hot add sprouts, garlic and seeds, and cook, stirring often, until sprouts are wilted and lightly cooked, but still green and crisp. Takes about 3 to 4 minutes. Some leaves might brown slightly.

Add white wine, and sprinkle with salt and pepper. Cook, stirring, 1 minute more.

Turn off heat, add salt and pepper to taste and stir in the lemon zest, reserving a little for top of dish.

Transfer to a serving bowl, sprinkle with remaining zest and serve.

Serves 4.

Cabbage and Pepper Saute Recipe

Ingredients:
1/2 small head of cabbage (approximately 4 cups chopped)
1 medium red Bell pepper, chopped
2 teaspoons paprika
1/2 teaspoon garlic (or one clove garlic, minced or pressed)
1 teaspoon caraway seeds
Salt and pepper
Oil to coat pan

Instructions:

Heat oil in pan. Saute’ pepper for a minute or two, then add cabbage. After another minute, add the seasonings.

Cook until vegetables are tender. If the pan gets too dry as it cooks, add a little white wine, chicken stock, or water.

Cheese Spinach Recipe

Ingredients:
1/2 cup grated gruyere cheese
1/2 cup ricotta cheese
1/4 cup crumbled blue cheese
2 tablespoon freshly grated Parmesan cheese
2 tablespoon chopped fresh dill
1 large egg yolk
2 tablespoon extra-virgin olive oil
2 10 oz. packages of fresh spinach, coarsely chopped.

Instructions:

Preheat the broiler to medium. Lightly butter 11-by 7-by 2-inch baking dish.

Mix the cheeses, dill and egg yolk in a large bowl.

Heat oil in a large pot over medium-high heat, and then add the garlic. Stir for a minute until fragrant.

Pour into the prepared baking dish. Add the spinach to the pot and sauté until wilted. Transfer spinach to strainer; drain well.

Pour over the garlic in the baking dish. Toss to coat with the oil and spread out evenly.

Sprinkle with cheese mixture. Broil until cheese is golden on top, and the spinach is heated through.

Fried Mushrooms Recipe

Ingredients:
1/2 lb mushrooms
3 tablespoon butter
1/4 teaspoon salt
1 dash garlic salt
1 dash onion salt
1 dash mixed herbs

Instructions:

Simmer 3 minutes. Great with hamburgers or steaks.

Green Beans a La Francaise Recipe

Ingredients:
2 cups green beans
1 cup shredded lettuce
1/2 cup chopped spring onions
2 sprigs parsley
2 sprigs mint
1/2 teaspoon Stevia
1/2 cup water
2 oz. butter
Salt and freshly ground black pepper

Instructions:

Place the green beans, lettuce, spring onions, parsley, mint,salt, pepper, stevia, water, and 1 oz of the butter in a saucepan.

Cover and cook over moderate heat for 15 to 20 minutes, or until the beans are tender.

Remove the parsley and mint, and toss the beans in the remaining butter.

Carb Count: 5.6 g per serving. Serves 4.

Green Beans with Pepper and Onions Recipe

Ingredients:
2 lb green beans, ends trimmed
5 tablespoons butter
2 large red bell peppers, thinly sliced
1 large onion, thinly sliced
1/4 cup chopped fresh marjoram
1 1/2 cups sliced almonds, toasted
Salt

Instructions:

Cook green beans in large pot of boiling salted water for 5 minutes, or until crisp-tender. Drain and rinse with cold water; set aside.

Melt 2 tablespoons of the butter in large, heavy skillet over medium-high heat. Add peppers and onion and saute until peppers are crisp-tender, about 8 minutes. Mix in marjoram.

Melt remaining 3 tablespoons of butter in heavy large pot over medium-high heat. Add beans and pepper mixture and stir until heated through, about 5 minutes.

Season to taste with salt and pepper. Transfer to large bowl.

Sprinkle with almonds.

Carb Count: 4.2 per serving. Serves 6.

Green Beans with Hot Dressing Recipe

Ingredients:
1 lb green beans
4 slices bacon
2 tablespoons butter, or bacon drippings
1/4 cup red wine vinegar
1 tablespoon spoonable Stevia
salt and pepper,to taste
2 tablespoons chopped fresh parsley

Instructions:

Boil or steam the green beans until they are tender but still firm. Drain and set aside.

Fry the bacon until crisp and drain on paper towels. Crumble the bacon into small pieces and set aside.

Melt the butter or bacon drippings in a small saucepan over moderate heat. Add the vinegar, Stevia, salt, and pepper and bring to a simmer.

Add the bacon to the sauce and pour over the green beans while still hot.

Serves 4.

Baba Ganoush Recipe

Ingredients:
1 1/2 lb eggplant
3 tablespoons lemon juice
1 teaspoon salt
2 teaspoons minced fresh garlic
3 tablespoons sesame tahini
1/4 c chopped parsley
1/2 cup toasted pine nuts
2 tablespoons olive oil

Instructions:

Preheat oven to 400 degrees F.

Prick eggplant all over with a fork. Bake whole until tender (about 30 minutes). Remove from oven, halve and scoop out the flesh.

Blend in a food processor with the lemon juice until smooth.

Mash the salt and garlic together and combine with the eggplant, along with the tahini.

Cool and stir in the parsley and pine nuts. Before serving, drizzle with the olive oil.

Serves 4

Toasted Almond Broccoli Recipe

Ingredients:
4 tablespoons sliced almonds
1/2 pound broccoli florets (4 cups)
2 teaspoons olive oil
Salt and freshly ground black pepper

Instructions:

Heat a nonstick skillet on medium heat and add almonds. Saute 1 minute or until almonds are golden, not brown. Remove and set aside.

Steam the broccoli

Remove and add oil and salt and pepper, to taste. Toss well. Sprinkle almonds on top.

Makes two servings.

Asian Stir Fried Broccoli Recipe

Ingredients:
1 bunch broccoli, cut into florets, stem peeled and chopped
1 tablespoon oil
2 cloves garlic, minced, grated, or pressed
2 teaspoons grated fresh ginger
2 tablespoons soy sauce
1 tablespoon dry sherry
2 teaspoons sesame oil
1 packet Stevia
3 tablespoons toasted slivered almonds

Instructions:

Lightly steam broccoli in a covered container in small amount of water for 3 minutes.

If the almonds aren’t toasted, you can do that in the skillet you’re going to use for the broccoli – either in a dry pan or a small amount of oil.

Combine soy sauce, sesame oil, sherry, and sweetener.

Heat the oil in a wok or large skillet.

Stir-fry the broccoli in hot oil for 1-2 minutes, until almost tender. Push to the edges of the pan.

Put ginger and garlic in the center of the pan (add a little more oil if need be), and saute 30-60 seconds, until fragrant.

Put sauce in the pan, and toss all ingredients together. Top with almonds.
