Lobster Fondue Dip Recipe

Ingredients:
2 tablespoons butter
2 cup shredded sharp cheddar cheese
1/4 teaspoon red pepper sauce
1/3 cup dry white wine
5 oz Lobster cut into small pieces

Instructions:

Melt butter in pan over low heat. Gradually add and stir in cheese until cheese is melted. (Cheese butter mixture may appear separated.)

Add red pepper sauce; slowly add wine, stirring until mixture is smooth. Add lobster; stir until heated. Makes about 1 1/2 cups.

Serve this hot cheese dip with veggie dippers, or pork rind dippers.

Octopus Recipe

Ingredients:
1-2 pound octopus.
2 shallots
5 cloves of garlic
A whole bunch of olive oil
Sea salt
Cracked pepper

Instructions:

The color of octopus should be a light gray and it shouldn’t have a strong, fishy aroma. (Make sure the beak, ink sacks and eyes are removed before cooking)

Mince the garlic and shallots.

Heat the roasting pan and put in just a little oil. Saute the shallots and garlic, then pour more oil, like two or three inches deep.

Rub the octopus with the salt and pepper, then put into the oil so that the octopus will be completely submerged.

Cover the pan and leave over low heat for two or three hours.

After a while (maybe an hour) the octopus will have begun to firm up. If the octopus rises out of the oil make incisions where the tentacles attach to the body so that you can force the octopus back under the surface of the oil.

After around three hours of cooking time, if the octopus head cuts easily and has a pliable texture, it is done. It will be chewy not rubbery.

Slice the tentacles, fan it on a plate and dust it with the sea salt.

San Francisco Seafood Casserole Recipe

Ingredients:
1 lb mussels or 18 clams
1/2 lb medium shrimp
1 lb cod or flounder fillets
2 tablespoon salad oil
1 medium onion, diced
1 large garlic, minced
1 28 ounce can tomatoes
1 8 ounce bottle clam juice
1 6 ounces can tomato paste
3/4 cup white wine
3/4 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon pepper

Instructions:

Scrub mussels, remove beards. Shell and devein shrimp. Cut fish into 2-inch chunks.

Cook onion and garlic in salad oil until tender. Stir in tomatoes with their liquid, clam juice, tomato paste, wine, and seasonings; heat to boiling.

Pour tomato mixture into 3-qt casserole; add fish chunks, mussels and shrimp. Cover casserole and bake 20-25 minutes until fish flakes easily, mussels open and shrimp are tender.

Sprinkle with parsley

Maine Tangy Lobster Recipe

Ingredients:
2 cups Lobster meat
1 tablespoon Lemon juice
1 teaspoon Dry mustard
1/3 cup Butter
1 teaspoon Worcestershire sauce
1/2 teaspoon
Salt & pepper to taste

Instructions:

Place all ingredients, except lobster, in top part of double boiler. Melt over hot water & stir to blend well.

Cut lobster in small pieces; add to mixture and cook 6 minutes.

Serve with lemon wedges.

Serves 4.

Oysters & Cavier Recipe

Ingredients:
2 lb Seaweed
18 Oysters, on half shell
2 Scallions
2 oz Black caviar
2 Lemons

Instructions:

Spread seaweed in a flat basket. Arrange chilled oysters in their shells, on the seaweed. Thinly slice scallions into rings. Sprinkle 2 or 3 pieces on each oyster. Top each one with a dab of caviar. Serve very cold, accompanied by fresh, thin sliced lemon wedges.

Caviar Dill and Purple Onion Recipe

Ingredients:
1/2 cup cream cheese, softened
3/4 cup sour cream
3 oz red or black caviar
1 teaspoon lemon juice
1 tablespoon fresh dill, chopped, OR 1 teaspoon Dried Dill, Crushed
2 teaspoons purple onion, diced
GARNISH: 1 Egg, large, Hard Boiled


Instructions:

Beat the cream cheese to a smooth consistency. Blend in the sour cream and add the remaining ingredients, blending well. Cover and chill. Just before serving, garnish with the egg which has been finely chopped. Makes about 1 1/2 cups of dip.

SUGGESTED DIPPERS: Cucumber, Turnips, Red Bell Peppers Strips.

Lobster a La Newberg Recipe

Ingredients:
1/4 cup of sherry
One pound of lobster meat
One teaspoonful of butter
One-half pint of cream
Yolks of four eggs
Lobster fat.

Instructions:

Three hours before cooking pour the sherry over the lobster meat and let it stand until ready to cook.

Heat the butter and stir in with the lobster and wine, then place this in a stew pan, or chafing dish, and cook for eight minutes.

Have the yolks of eggs well beaten and add to them the cream and lobster fat, stir well. Put this in a double boiler and let cook until thick, stirring constantly.

When this is cooked pour it over the lobster and let all cook together for three minutes.

Serve in a chafing dish.

Oysters a La Catalan Recipe

Ingredients:
Tablespoon butter
2 teaspoons grated edam or parmesan cheese
4-1/4 teaspoons Worcestershire sauce
2 tablespoons cream
Meat of one good sized crab – cut fine
Two dozen oysters

Instructions:

Put the cheese and butter into a double boiler and when melted smooth add the Worcestershire sauce. Mix well and add the cream and then the crab meat. When creamy and boiling hot drop in the oysters. As soon as the oysters are crinkled serve on hot plates.

Serves four.

Rich Shrimp for Special Occasions Recipe

Ingredients:
2 packages (10 ounces each) frozen chopped spinach
3 tablespoons butter
1 pound mushrooms, sliced
1 small onion, diced
1 bag (14 ounces) frozen, cooked, shelled shrimp (little ones are best)
2 teaspoons liquid beef bouillon concentrate
1-1/2 cups heavy cream
1 cup sour cream
1 cup grated parmesan cheese

Instructions:

Preheat oven to 350 degrees F.

Cook the spinach.

Melt the butter in a heavy skillet over medium heat, and start sauteing the mushrooms and onions. When they start to get limp, break up your frozen shrimp a bit, and add them to the skillet.

When the shrimp are thawed and the onions are quite limp and translucent, scoop out the veggies and shrimp with a slotted spoon, and put them aside in a bowl. Turn up the burner to medium high. A fair amount of liquid will have accumulated in the bottom of the skillet; add the beef bouillon concentrate to it, and oil the liquid until it’s reduced to about one-third of its original volume.

Turn the burner back down to low, stir in the heavy cream, sour cream and parmesan, and just heat it through (don’t let it boil). Stir the shrimp and vegetables back into this sauce.

Drain spinach well by putting it into a strainer and pressing it with the back of a spoon,to make sure all the liquid has been removed.

Grease a casserole and spread half of the spinach in the bottom of it. Put half of the shrimp mixture over that. Repeat the layers with the rest of the spinach and the rest of the sauce.

Bake for 1-1/2 hours.

6 servings.

Salmon Rolls Recipe

Ingredients:
1/4 lb lox
4 oz cream cheese
1 tablespoon lemon juice
1 tablespoon capers

Instructions:

Combine cream cheese with lemon juice and capers. Spread on salmon slices and roll up. Chill and slice in bite size pieces. These are very elegant served with a fancy toothpick in each.

1 net gram of carbohydrate per serving. Makes 16 pieces.
