Fruit Shake Recipe

Ingredients:
1/2 cup whipping cream
1/2 teaspoon Stevia
1/2 cup berries (strawberries, blueberries, raspberries, etc)
1/4 cup water
5 ice cubes

Instructions:

Blend in blender until ice is integrated into mixture. Serve.

Low Carb Irish Cream Recipe

Ingredients:
3 cups heavy cream
1 2/3 cups Irish whiskey
1 teaspoon instant coffee powder
1 1/2 teaspoon cocoa powder
1 teaspoon vanilla extract
1 teaspoon almond extract
24 packets Stevia.

Instructions:

Mix cocoa and coffee powders with sweetener. Wet mixture with a bit of the whiskey to make a smooth paste.

Meanwhile, place cream in a heavy pan and cook on low heat until reduced to 2 1/2 cups. Cool cream to room temperature. Blend whiskey, paste,extracts and cream until smooth.

Store in fridge no more than 2 weeks.

Carb Count: 0.1 grams per serving. Makes 16 – 1.5 oz.servings.

Pizza Snack Recipe

Ingredients:
8 oz cream cheese
2 eggs
1 teaspoon garlic powder
1 teaspoon oregano
¼ cup sugar-free pizza sauce or spaghetti sauce
½ cup shredded mozzarella cheese, or combination mozzarella and other cheese such as Parmesan
¼ cup finely minced green pepper or other pizza topping
24 slices of thin-sliced pepperoni, preferably in large thin slices

Instructions:

Heat oven to 350° F.

Put the pepperoni slices into the bottoms of the mini-muffin cups.

Using a mixer, mix the cream cheese until smooth and fluffy. Add eggs, garlic, and oregano, and beat until smooth.

Mix the rest of the ingredients in by hand.

Fill the muffin cups with the egg and cheese mixture.

Bake for about 15-18 minutes, or until lightly browned on top and set in center.

Remove from oven, and cool for a few minutes (5-10), Loosen with a knife and place on a serving plate.

Makes 24 pieces – approximately 1 carb per piece.

Cheese Puffs Recipe

Ingredients:
1 bag pork rinds, plain
2 eggs
1 cup half & half
5 oz cheese – cut up or grated
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon mustard powder

Instructions:

Heat oven to 350.

Grind the pork rinds. Add the eggs, onion, garlic and mustard powders and cheese. Blend well until cheese is broken down. Add the half & half. This will make a stiff, moist dough.

Drop by small spoonfuls (about the size of a quarter) onto a lined and sprayed cookie sheet. Bake until browned around edges and lightly browned on top, approx. 18 min.

Makes approximately 90 cheese puffs.

Stuck in a Convenience Store

When you aren’t able to prepare your own meals, when in a bind such as a road trip, or near-famished state…..

Head for the refrigerated deli section. Lunchables are a great combo – just toss the crackers and have a meat and cheese spread. You can also find lean meat lunchables such as turkey. Find a packet of mustard to go with it.

Grab a microwaveable egg sandwich, remove the biscuit bun.

Go for the nuts and get some almonds, or macadamia nuts.

Look for cheese sticks.

Find beef jerky sticks, including beef and cheese combinations.

Italian Frico Chips Recipe

Ingredients:
2 cups coarsely grated Parmesan cheese (about 6 1/2 ounces)
2 1/2 tablespoons pork rinds flour
Freshly ground black pepper to taste

Instructions:

Preheat the oven to 375°F. Oil 2 nonstick baking sheets.

In a large bowl, thoroughly mix the cheese and flour. Season generously with pepper. Place generous tablespoonfuls of the mixture 1/2 inch apart on the baking sheets, and bake for about 10 minutes, or until fragrant and golden brown.

Place the chips on a rack and let cool to room temperature. Serve immediately, store in an airtight container at room temperature for up to 2 days, or freeze for up to 2 weeks.

Carb Count: 10 chips = 1 carb. Makes: 24 chips.

Egg Fu Yung Recipe

Ingredients:
6 eggs
2 tablespoons green onions, minced
1/2 teaspoon pepper
1 teaspoon salt
1 lb bean sprouts
1 cup crabmeat or shrimp cooked sauce
2 packets Stevia
3 teaspoon soy sauce
1/2 cup water

Instructions:

Beat eggs well. Add drained bean sprouts. With fresh sprouts, blanch them by placing them in a covered skillet with a few teaspoons of water for just a few minutes.

Add bean sprouts, onion, salt, pepper and crab meat to eggs.

Cook like pancakes in a small amount of oil.

Mix all sauce ingredients and cook, stirring until thickened. Serve over the Egg Foo Yung.

Baked English Recipe

Ingredients:
6 eggs, beaten
3/4 cup cream
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 cup cheddar cheese, shredded
1 green onion, slice thin
3 slices bacon, cooked; crumbled
1 tablespoon butter
1 tablespoon parmesan
Additional bacon for garnish – optional

Instructions:

Beat cream into eggs. Stir in seasonings, cheddar, onion and bacon.

Melt butter in a 9″ frying pan. Pour egg mixture into pan. Sprinkle with Parmesan. Bake at 400~ for 20 minutes or until set and golden.

Garnish with additional bacon, if desired. Serve immediately.

French Scrambled Eggs Recipe

Ingredients:
3 tablespoon Butter
4 medium white part only leek
2 tablespoon butter
20 beaten to blend egg
8 oz cream cheese, cut into small pieces
1 tablespoon minced mint or 1 tsp, dried mint, crumbled.
Salt
Pepper
Sprigs mint

Instructions:

Melt 3 tablespoons butter in heavy large skillet over low heat. Thinly slice leek and add, cover and cook, stirring occasionally, until soft, about 20 minutes. Uncover and continue cooking, if necessary, until all liquid evaporates; do not brown. Remove leek from skillet.

Melt 2 tablespoons butter in same skillet over low heat. Add eggs, room temperature cream cheese, mint, salt and pepper and cook, stirring with whisk or fork, until egg begins to set.

Stir in leek and cook until mixture forms soft curds. Taste and adjust seasoning. Turn out onto heated platter. Garnish with fresh mint sprigs.
