Green Peppercorn Sauce Recipe

Ingredients:
1 cup beef or chicken stock
1 cup cream
2-3 teaspoon canned green peppercorns, rinsed and drained
1 tablespoon. brandy

Instructions:

Heat stock over low heat until boiling. Add in cream and peppercorns. Boil for 8-10 minutes, stirring constantly until slightly thickened. Add the brandy and boil for 1 minute.

Good with steaks or chicken breasts fillets

Cheddar Cheese Dip Recipe

Ingredients:
2 tablespoons olive oil
1 pound sharp cheddar cheese, shredded
1 cup sour cream
1 egg
1 teaspoon dry mustard

Instructions:

Place olive oil in top of double boiler and add cheese. Place over simmering water and stir until cheese begins to melt.

Add sour cream gradually, stirring constantly until cheese is melted and mixture is smooth.

Beat the egg. Stir in the egg, mustard and paprika.

Serve while still warm with celery, green peppers, mushrooms, cucumbers, radishes, asparagus or raw or lightly steamed green beans or cauliflower.

Cheese Sauce Recipe

Ingredients:
1 cup heavy cream
1/3 cup cheese cut fine
1/2 teaspoon salt
1/4 teaspoon mustard
1/4 teaspoon paprika

Instructions:

Mix cream, cheese and seasonings. Stir until cheese is melted. And voila! Enjoy.

Guacamole Dip for Veggies Recipe

Ingredients:
2 avocados
1 clove of garlic – freshly chopped or minced (about 1 teaspoonful)
1 tablespoon cilantro (optional)
lime juice to taste (optional)
salt and pepper to taste
cucumbers, celery, or any vegetable of your choice

Instructions:
Peel and take out the pit from the avocados. Put the flesh into a bowl and mash until relatively smooth. Mince the garlic and mix that in. Stir in the cilantro and lime juice. Add seasoning as desired.

Cut up your chosen vegetables to size for dipping.

Enjoy!

Roasted Red Pepper Dip Recipe

Ingredients:
1- 8 ounce carton sour cream
1/2 cup chopped bottled roasted red sweet peppers
2 tablespoons sliced green onion
1 tablespoon snipped fresh basil, or 1/2 teaspoon dried basil, crushed
1 clove garlic, minced
1/4 teaspoon salt
Assorted vergetable dippers

Instructions:

In a small bowl stir together sour cream, roasted red peppers, green onion, basil, garlic, and salt.

Cover and chill for at least 4 hours or up to 14 hours to allow flavors to blend.

Stir dip before serving. Serve with assorted vegetable dippers.

Servings: 10 (2 tablespoons dips and 1/4 cup vegetable dippers

Carbs per serving: 6 g

Salsa Recipe

Ingredients:
1 small tomato, chopped
3 green onions, finely chopped
1/2 jalapeno pepper, fresh or canned (seeded and finely chopped)
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
Salt & Pepper

Instructions:

In a small bowl, combine tomato, green onions, jalapeno, cilantro and lime juice and mix well. Season to taste with salt and pepper.

Refrigerate overnight for maximum flavor.

Ingredients:
2 cups tightly packed fresh cilantro leaves
1 cup fresh flat-leaf parsley
1/4 cup extra-virgin olive oil, divided
2 tablespoons white wine vinegar
1 tablespoon water

Instructions:

Place cilantro, parsley, onion, and garlic in a food processor and process until finely chopped. Add the oil, vinegar, and water; process until thick.

Low Carb Barbeque Sauce Recipe

Ingredients:
1 cup prepared yellow mustard
12 packets Stevia blend
3/4 cup cider vinegar
2 tablespoons chili powder
1 teaspoon ground black pepper
1 teaspoon ground white pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon soy sauce
2 tablespoons butter

Instructions:

In a saucepan over medium heat, stir together the mustard, Stevia, cider vinegar, chili powder, black pepper, white pepper, and cayenne pepper. Simmer for 30 minutes.

Stir in the soy sauce & butter; simmer for 10 more minutes.

Cool completely, and refrigerate overnight to blend flavors before using.

Makes about 2 1/2 cups of sauce

Turkey Wrap Recipe

Ingredients:
2 large lettuce leaves
2 slices turkey
1/4 red bell pepper, sliced thinly
1 tablespoon pesto sauce

Instructions:

Lay lettuce leaf flat on a plate. Place one slice of turkey. Spread with pesto sauce. Top with 1/2 of the red pepper slices.
Roll up.
Repeat with second piece of lettuce and turkey.
Total Carbs both pieces = 1.98

Duck Liver Mousse Recipe

Ingredients:
1 lb duck livers, cleaned
1 tablespoon kosher salt
2 To 3 large shallots, chopped
1 oz brandy
1 tablespoon fresh pepper
1 tablespoon nutmeg
3 cups heavy cream

Instructions:

Put liver, shallots, pepper, nutmeg, salt, brandy in food processor and puree. With machine on, add 3 cups heavy cream. Strain through a fine sieve.

Bake in water bath at 325 to 350 until the center is firm to the touch. Serve as an appetizer.
