Greek Spice Rub Recipe

Ingredients:
2 tablespoon dried thyme
2 tablespoon dried rosemary
2 tablespoon oregano
2 teaspoon salt
1 teaspoon ground black pepper

Instructions:

Combine all ingredients in a small bowl.

To use on meats or poultry: Mix one tablespoon olive oil, one tablespoon lemon juice and one clove garlic, crushed. Rub or brush over meat. Coat oiled meat with dry spice mix, using about one tablespoon per pound of meat.

Cover and refrigerate 30 minutes before grilling, broiling or roasting.

Leftover spices may be stored in a small jar or plastic container for several weeks. Don’t contaminate the spices by washing hands thoroughly after oiling the meat or chicken and using a clean spoon to remove the spice from the bowl or jar.

• Make a paste by combining the olive oil, lemon juice and garlic with the dry spices. Brush or rub on meats.

• Make a wet marinade with 1/4 cup olive oil, 1/4 cup lemon juice, 2 cloves garlic, minced, and 2 tablespoons of the spice mix.

Cajun Blackening Spice Recipe

Ingredients:
5 teaspoons paprika
1 teaspoon ground dried oregano
1 teaspoon ground dried thyme
1 teaspoon cayenne pepper
1/2 teaspoon finely ground black pepper
1/2 teaspoon finely ground white pepper
1/2 teaspoon garlic powder

Instructions:

Mix together and store in an air-tight container. Store in a cool, dark place.

Seafood Bisque Recipe

Ingredients:
1/2 cup finely chopped shallots (about 2)
1/4 cup finely diced celery
2 sticks butter
1 quart water
1 tablespoon chicken stock
2 6.5-oz. chopped clams with juice
1/2 lb uncooked shrimp, cleaned, shelled, deveined
1/3 lb cod (leave in one piece)
1/3 lb salmon (leave in one piece-remove skin)
4 cups heavy cream
1 small can crab meat
1/2 cup dry sherry
Chives for garnish, optional

Instructions:

Sautè shallots and diced celery in butter, until soft. Stir with a wire whip for 5 minutes, on low heat and set aside.

Bring 1 quart of water to a boil. Add chicken stock, clams with juice, all of the shrimp and the whole pieces of cod and salmon. Return to a boil; lower the heat and simmer for about 5 minutes. Strain the stock, and reserve the seafood. Stir the shallot/butter mixture into the stock.

Flake the large pieces of boiled fish and add the canned crabmeat. Add the heavy cream and sherry. Bring to a simmer and heat through. Add chives, if desired.

Carb Count: 2-3 carbs per serving. Serves 6-8

Salmon with Avocado Recipe

Ingredients:
1 lb. salmon fillet
1 ripe avocado (peeled)
1 cup warm chicken broth
3 tablespoons sherry wine vinegar
1/2 cup heavy cream
Salt
Pepper


Instructions:

In blender puree all ingredients except salmon.

Slice salmon and pound to flatten. Put salmon in hot pan with no grease. This will cook quickly.

Spread warm avocado mixture on plate. Serve salmon on top.

Lemon-Pepper Tuna Recipe

Ingredients:
4 tuna steaks — 3/4 inch thick
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1 Tablespoon oil
1/2 cup chicken broth
1 Tablespoon lemon juice
1 Tablespoon country-style Dijon mustard
1 Tablespoon finely chopped fresh chives

Instructions:

Sprinkle both sides of tuna with salt and pepper.

Heat oil in nonstick skillet over medium-high heat. Add tuna; cook until browned on both sides and just slightly pink in center, about 8 minutes. Transfer tuna to platter.

To same skillet, add chicken broth and lemon juice. Heat to boiling. Remove from heat. Swirl in mustard and chives. Spoon sauce over tuna. Serve immediately.

Sorrel & Lemon Sauce Recipe

Ingredients:
1 oz. sorrel leaves, stems removed
3 egg yolks
5 oz. of butter, melted
3 tbl. lemon juice

Instructions:

Put the sorrel in a bowl, cover with boiling water and leave for 30 seconds. Drain and refresh in cold water to keep the color, then chop finely or tear into very small pieces.

Put the egg yolks in a bowl and place over a pan of simmering water. Whisk the yolks for about 1 minute, or until they thicken.

Continue whisking and gradually drizzle the melted butter into the yolks, a little at a time, whisking after each addition, until the sauce is thick and creamy. Remove the bowl from the heat. Whisk in the lemon juice and the sorrel and season to taste with salt and white pepper.

Good with grilled salmon, chicken and most types of fish.

Veloute Sauce Recipe

Ingredients:
6 cups chicken stock
2 Tbsp clarified butter
2 Tbsp thickener (see Low Carb Thickeners)

Instructions:

Prep Time: 5 minutes
Cook Time: 30 minutes

Heat the chicken stock to a simmer in a medium saucepan, then lower the heat so that the stock just stays hot.

In a separate heavy-bottomed saucepan, melt the clarified butter over a medium heat until it becomes frothy. Don’t let the butter turn brown as this will affect the taste.

Stir the thickener that you chose into the melted butter a little bit at a time, until it is a pale-yellow-colored paste. This paste is called a roux.

Heat the roux for another few minutes or so, until it has turned a light blond color. Don’t let it get too dark.

Using a wire whisk, slowly add the hot chicken stock to the roux, whisking vigorously to make sure it’s free of lumps.

Simmer for about 30 minutes (the volume will be reduced by about one-third) Stir frequently to make sure the sauce doesn’t scorch the bottom of the pan. You can use a ladle to skim off any impurities that rise to the surface.

The resulting sauce should be smooth and velvety. If it’s too thick, whisk in a bit more hot stock.

Remove the sauce from the heat.

If you want an extra smooth consistency, carefully pour the sauce through a wire mesh strainer lined with a piece of cheesecloth.

Keep the velouté covered until you’re ready to use it.

Makes about 1 quart of chicken velouté sauce.

Velouté is one of the five sauces of classical cuisine. It can also be used for fish.

Low Carb Barbeque Sauce Recipe

Ingredients:
1 cup prepared yellow mustard
12 packets Stevia blend
3/4 cup cider vinegar
2 tablespoons chili powder
1 teaspoon ground black pepper
1 teaspoon ground white pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon soy sauce
2 tablespoons butter

Instructions:

In a saucepan over medium heat, stir together the mustard, Stevia, cider vinegar, chili powder, black pepper, white pepper, and cayenne pepper. Simmer for 30 minutes.

Stir in the soy sauce & butter; simmer for 10 more minutes.

Cool completely, and refrigerate overnight to blend flavors before using.

Makes about 2 1/2 cups of sauce

Greek Chicken Salad with Lemon Vinaigrette Recipe

Ingredients:
6 cups lettuce
2 cups cooked chicken
1/3 cup feta cheese, crumbled
12 Greek olives
2 tablespoons green onions, sliced
1 medium tomato, coarsely chopped
1 medium cucumber, halved, seeded, 1/4″ slices

Lemon Vinaigrette:
Ingredients:
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon dried oregano, or 1 tablespoon, if fresh
1/2 teaspoon salt
1/8 teaspoon pepper
1 clove garlic, finely minced

Instructions:

Mix the vinaigrette ingredients and set aside.

Wash the lettuce, dry well & place in a large salad bowl.

Add the salad ingredients, pour on the dressing & toss well.

Serve.

Caesar Salad Recipe

Ingredients:
1 head Romaine Lettuce (washed)
4 cloves Garlic
1 teaspoon Tabasco Sauce
2 teaspoon Worcestershire Sauce
1 teaspoon Dijon Mustard
1 Egg
2 teaspoon Black Pepper
1 oz Grated Parmesan or Romano Cheese
1 oz Shaved wedge Parmesan or Romano Cheese (optional)
1/4 cup Extra Virgin Olive oil
Grilled chicken breast or bacon (optional)

Instructions:

Wash the lettuce, and break into bit sized pieces.

Peel the Garlic. In a blender, add the garlic, mustard, Tabasco, Worcestershire, egg, black pepper and olive oil. Blend until the Garlic is chopped and thoroughly mixed with the rest of the dressing.

Pour the dressing over the lettuce and toss until all leaves are coated. Add bacon or chicken breast if desired. Add the shaved parmesan or romano on top and serve.
