Meals on the Run Recipe

Deli Meat Roll-ups
Take chicken, turkey, beef, ham, pastrami, etc. Take a couple of slices of meat, spread with good mayonnaise or mustard. If desired, top with a thin slice of good cheese, and roll up, jelly-role fashion. Secure with toothpicks. Put three or four or more in a plastic sandwich bag or waxed paper sack.

Food to snack on
2 celery ribs filled with 1 tablespoon of cream cheese with scallions

4 slices of hard salami spread lightly with cream cheese and rolled around a thin scallion.

2 thin slices of boiled or baked ham spread with cream cheese and chives.

2 thin slices of ham spread with spicy mustard and rolled up with thin slices of cheese.

Fresh carrot, celery, cucumber, bell pepper or zucchini sticks.

Bag of nuts – 1/4 cup roasted sunflower seeds, walnuts, macademia nuts pecans, etc.

Natural jerky – to make natural jerky. (If you buying ready made, be sure that it doesn’t contain MSG, or nitrates.)

Stuck in a Convenience Store

When you aren’t able to prepare your own meals, when in a bind such as a road trip, or near-famished state…..

Head for the refrigerated deli section. Lunchables are a great combo – just toss the crackers and have a meat and cheese spread. You can also find lean meat lunchables such as turkey. Find a packet of mustard to go with it.

Grab a microwaveable egg sandwich, remove the biscuit bun.

Go for the nuts and get some almonds, or macadamia nuts.

Look for cheese sticks.

Find beef jerky sticks, including beef and cheese combinations.

READ THE LABELS OF EVERYTHING YOU EAT. Make sure the ingredients satisfy your dietary needs.

Egg Quiche Recipe

Ingredients:
10 Eggs, slightly beaten
2 green peppers chopped
2 teaspoon parsley flakes
1 teaspoon oregano
Salt and pepper to taste
2 cup diced cooked turkey or chicken
2 tablespoons onion flakes
2 teaspoons dried chili pepper flakes
1/2 teaspoon garlic powder

Instructions:

Beat eggs lightly and stir in remaining ingredients. Blend in well. Pour mixture into 8 in pam sprayed cake pan and bake in preheated 350 oven for 30 minutes or until set.

Cut into wedges and serve hot or cold.

Veloute Sauce Recipe

Note: Velouté is one of the five sauces of classical cuisine. It can also be used for fish.

Ingredients:
6 cups chicken stock
2 Tbsp clarified butter
2 Tbsp thickener (see Low Carb Thickeners)

Instructions:

Heat the chicken stock to a simmer in a medium saucepan, then lower the heat so that the stock just stays hot.

In a separate heavy-bottomed saucepan, melt the clarified butter over a medium heat until it becomes frothy. Do not let it turn brown as it will affect the flavour.

Stir the thickener you choose until it is fully incorporated into the butter, giving you a pale-yellow-colored paste. This paste is called a roux.

Heat the roux for another few minutes or so, until it has turned a light blond color. Don’t let it get too dark.

Using a wire whisk, slowly add the hot chicken stock to the roux, whisking vigorously to make sure it’s free of lumps.

Simmer for about 30 minutes (the volume will be reduced by about one-third) Stir frequently to make sure the sauce doesn’t scorch at the bottom of the pan. Use a ladle to skim off any impurities that rise to the surface.

The resulting sauce should be smooth and velvety. If it’s too thick, whisk in a bit more hot stock.

For an extra smooth consistency, you can pour the sauce through a wire mesh strainer lined with a piece of cheesecloth.

Keep the velouté covered until you’re ready to use it.

Makes about 1 quart of chicken velouté sauce.

Zanibar Chicken Recipe

Ingredients:
3 pounds chicken thighs and/or drumsticks
2 tsp. cinnamon
1/4 tsp. ground cloves
1/4 pepper
2 Tbsp olive oil
1 medium onion, chopped
1 garlic clove, crushed through a press
3/4 cup orange juice
3 Tbsp raisins
1/3 cup slivered almonds

Instructions:

Season chicken with the spices.

In a large fry pan, heat oil over med-high heat. Add chicken, in batches if necessary, and cook, turning until browned, about 10 minutes. Remove and set aside.

Add onion to pan. Cook until soft, about 3 minutes. Add garlic and cook 1 minute longer.

Return chicken to pan. Add orange juice and raisins. Cover, reduce heat, and simmer 15 minutes, until chicken is tender. Garnish with almonds.

Chicken Lasagna Recipe

Ingredients:
1/2 cup chopped onion
1/2 cup diced green pepper
1/2 lb sliced fresh mushrooms
1 can chicken soup
1/2 cup cream
3 chicken breasts, cooked and chopped up into bite size pieces
3-4 small zucchini sliced thin
2 cup cheddar cheese
1-1/2 cup cottage cheese
1/2 cup parmesan cheese
1 teaspoon olive oil
Garlic powder
Salt & Pepper to taste.

Instructions:

Saute onion, green peppers and mushrooms in 1 teaspoon of olive oil. Add chicken soup and cream. Mix together cottage cheese and parmesan cheese.

Put chicken pieces in bottom of oval or square oven dish. Salt & pepper. Sprinkle with garlic powder. Layer zucchini slices. Cover with cottage cheese mixture. Then put cheddar cheese on. Add veggie sauce and cover.

Bake at 350 degrees for 45 minutes covered. Take off cover and cook another 20 to 30 minutes until zucchini is cooked completely.

Chicken & Peppers Recipe

Ingredients:
3-4 Chicken Breast
2 Green or Red Bell Peppers
1/2 White Onion
Olive Oil
Garlic or Teriyaki sauce
Monterey Jack Cheese

Instructions:

Cut and cook pepper and onion in butter or oil until crisp tender with salt, pepper to taste, remove and set aside.

Sprinkle chicken with teriyaki sauce or garlic (salt or powder) both sides, brown in olive oil.

Pour peppers and onions over chicken and top with cheese.

Crispy Chicken Cutlets Recipe

Ingredients:
6 chicken cutlets
1 cup mayonnaise
1/4 cup fresh lemon juice
2 garlic cloves, minced
2 scallions, chopped, including the firm green
Salt & Pepper to taste
Several sprigs fresh thyme, leaves only

Instructions:

Salt the cutlets lightly and rub the sale in on both sides. In a small bowl mix together the remaining ingredients. Spread the flavored mayonnaise over the chicken, coating both sides, and let it marinate for 2 hours.

Preheat the oven to 350 degrees F. Put the cutlets on a foil-lined baking sheet and bake for 20 to 30 minutes or until the outside is golden brown and crispy. If they’re not crispy, run them under the broiler.

Serves 6.
