Buffalo Wings Recipe

Ingredients:
1 egg
1/2 cup olive oil
1 cup cider vinegar
1 teaspoon salt
1/2 teaspoon pepper
cayenne pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
2 pounds chicken wings

Blue Cheese Dunking Sauce:

1 cup mayonnaise
1/2 cup sour cream
1 green onion, chopped
1 garlic clove, pushed through a press
1 tablespoon lemon juice
1/4 cup crumbled blue cheese
Combine all ingredients. Mix well.

Instructions:

Heat oven to 450 degrees F. Beat egg in a medium bowl. Add oil and beat until combined. Add vinegar, salt, pepper, cayenne, garlic, powder, and celery salt, stir until well combined.

Cut chicken wings in half at joint; remove wing tips and discard. Dip chicken pieces into marinade and arrange on a large baking pan.

Bake 20 minutes, turning and brushing with marinade several time, until wings are crisp. Remove from oven, drain and arrange on a warm platter. Serve with Blue Cheese Dunking Sauce.

Cajun Cornish Hen Recipe

Ingredients:
1 rock cornish hen, giblets removed
2 tbsp cajun seasoning blend
1/3 cup butter
Salt and pepper to taste

Instructions:

Thaw the chicken. Thoroughly rinse the bird under cold running water, and pat dry with paper towels.

Preheat the oven to 350F

Place the bird breast-side up on your cutting board. Pat the surface with the cajun seasoning, on both sides of the bird. Make sure all exposed skin is covered. Don’t worry about the cavity of the bird.

Melt the 1/3 cup of butter. Place the bird in a casserole dish, and slowly pour the butter over the top of the bird. If the seasoning washes off into the butter, that’s okay, just sprinkle a little extra over the uncovered parts of
the bird.

Place the bird in the oven, uncovered. Bake at 350F for 1 hr 20 mins, using the turkey baster to baste the bird with the butter about every 10-15 minutes. The surface of the bird should be crisp when done.

Chicken Pate Recipe

Ingredients:
2 lb skinned/boned breast chicken
2/3 cup white part only leek
1/4 cup shallots
3/4 cup unsalted butter
3 eggs whites only
1 1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/8 teaspoon freshly grated nutmeg
2 1/4 cup well-chilled whipping cream
1/2 cup chicken broth
2 cup tight-packed leaves spinach
2 cup tight-packed leaves basil
3/4 cup well-chilled whipping cream

Instructions:

Cut chicken into 1/2-inch pieces. Puree in processor in 2 batches to very smooth paste. Refrigerate until well chilled, at least 1 hour.

Meanwhile, thinly slice leek and shallot. Melt butter in heavy small skillet over low heat. Add leek and shallot and cook until soft, stirring occasionally, about 15 minutes. Cool.

Combine half of chicken with half of leek mixture in processor. Puree until smooth. Add half of egg whites and process until smooth. Transfer to bowl. Repeat with remaining chicken, leek mixture and egg whites. Refrigerate until well chilled.

Blend half of chicken mixture, salt, pepper and nutmeg in processor. With machine running, slowly pour 1 cup plus 2 tablespoons cream through feed tube. Blend 1 minute. Transfer to large bowl.

Repeat with remaining chicken, salt, pepper, nutmeg and 1 cup plus 2 tablespoons cream.

Combine both chicken mixtures.

Bring chicken broth to boil in large skillet. Add spinach and basil and toss until just wilted, about 45 seconds. Drain well. Squeeze out any remaining liquid. Puree spinach mixture with remaining 3/4 cup cream until smooth. Blend in 1/4 of chicken mixture.

Preheat oven to 350F.

Line 9×5-inch loaf pan with plastic wrap, leaving 5-inch overhang. Pour half of white chicken mixture into pan. Cover with half of spinach mixture. Using knife, swirl through layers to create marble effect.

Repeat with remaining chicken and spinach. Tap pan on work surface to settle pate. Fold overlapping plastic over top of pate. Cover pan tightly with foil.

Place loaf pan in deep roasting pan. Pour enough water into roasting pan to come 2/3 up sides of loaf pan.

Transfer to oven and bake 1 1/4 hours. Cool. Weight pate with heavy object and refrigerate overnight. Unmold pate onto platter. Let stand at room temperature 1 hour before serving.

Fajitas Recipe

Ingredients:
1.5-2 lbs flat steak, or other beef or chicken easily cut into strips
15 medium scallions (green onions)
2 large Bell peppers, sliced – two different colors is nice
1/4 cup soy sauce
1/4 cup lime juice
1 teaspoon chili powder
2 tablespoons oil

Instructions:

Combine soy sauce, lime juice, chili powder, and oil. If grilling, save a couple of tablespoons aside to toss with the vegetables.

Slice the meat into about 1/2 inch slices.

If cooking in a skillet, marinate everything together in a bowl or plastic bag (a zip-type works well). If grilling, marinate the meat and veggies separately. Few minutes to several hours.

If grilling, remove from marinade and grill.

For cooking in a skillet cook the meat first add a little oil to the skillet and get it very hot. If you don’t get it hot enough the meat will steam instead of browning.

When the meat is browned, remove and add veggies. When they begin to soften, return meat to skillet to heat through.

Serve with salsa, sour cream, cilantro and guacamole.

Serves 5.

Lamb Meatballs and Spinach Recipe

Ingredients:
1 chicken breast (2 halves) ground
4 teaspoons olive oil
1 egg, slightly beaten
2 tablespoons pork rind flour
8 cup chicken broth
Salt freshly ground
Black pepper
1 dash nutmeg
2 1/2 lb lamb, breast or rib chops
2 garlic cloves, sliced
2 parsley, Italian sprigs coarsely chopped
2 lb spinach,cooked and slightly drained
1/2 cup pork rinds crumbled.

Instructions:

Combine ground chicken, 1 tablespoon olive oil, egg, pork rind flour and 2 tablespoon’s broth in small bowl. Add salt, pepper and nutmeg to taste and mix well.

In large pot, place the lamb with remaining oil, sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper and lightly brown for 2-3 minutes. Add garlic, parsley and 1 cup of warm water.

Add the ground chicken mixture gently to pot with lamb. Cover and simmer 1 to 1 1/2 hours.

Add spinach and 1 tablespoon salt and simmer, covered, 15 minutes longer.

Transfer the lamb chops, half the spinach and most of the gravy to a hot serving dish and keep warm.

Add remaining broth to pot and bring to a boil. Add crumbled pork rind pieces and cook 4 to 5 minutes. Turn the heat off and let stand 5 minutes before serving as a soup.

Serve the lamb and spinach as the main dish.

Garlic Dill Meatballs

Ingredients:
1 pound ground chicken
1/2 pound ground pork
1 small onion, finely chopped
1/2 cup ground pork rinds (optional)
1 egg
2 garlic cloves, pressed
2 tablespoon chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper
2 tablespoon olive oil

Instructions:

Heat oven to 375 degrees.

Combine chicken, pork, onion, pork rinds, egg, garlic, dill, salt and pepper in a bowl and mix well. Divide mixture into 18 (1 1/2-inch) meatballs.

Heat oil in a large ovenproof skillet over medium-high heat until very hot. Brown meatballs (in batches, if necessary) on all sides, about 6 minutes.

Transfer skillet to oven; bake 10 minutes or until meatballs are cooked through.

4 servings.

Chopped Liver Recipe

Ingredients:
1 lb Chicken, beef or calf liver (broiled)
4 tablespoons Chicken fat
2 small Onions, diced
3 Eggs, hard cooked
1 teaspoon Salt
1/4 teaspoon Pepper

Instructions:

Wash the liver after broiling.

Heat 2 tablespoons of fat in a skillet and saute the onions. reserve the onions and saute the livers in the remaining fat.

Grind or chop the livers, onions and eggs and mix them to a smooth paste. add the salt and pepper, and additional fat, if desired. blend the mixture well.

Serve on lettuce or as a filling for celery stalks.

Ukranian Liver Pate Recipe

Ingredients:
1 lb liver
2 onions, large. thinly sliced
1 egg
1/2 cup chicken stock
1/3 cup butter
1 teaspoon salt
1/4 teaspoon black pepper

Instructions:

Melt the butter in a skillet. Add the onions and fry until they are turning golden.

At this point add the liver which has been sliced into thin strips and cook for 10 minutes & remove form heat.

Mix all of the ingredients with the onions and liver in a food processor. Chop in processor until a smooth textured mixture is achieved. Grease a 9″ baking dish and spoon the mixture into it.

Bake for 45 minutes in a pre-heated 450 degree F oven. Remove from oven and cool to room temperature.

Note: This mixture may be turned into metal molds for baking or into individual custard cups as well.

Smoked Chicken, Avocado and Cheddar Cheese Omelet Recipe

Ingredients:
4 large eggs
6 oz chicken breasts, smoked
2 oz sharp Cheddar cheese, grated
2 oz Monterey Jack cheese, grated
1/4 cup guacamole

Instructions:

Prepare omelet open-faced. Arrange warmed, sliced, smoked chicken pin-wheel style over top and sprinkle with cheeses. Place under broiler to melt.

Garnish with guacamole.

Carb Count: 2.8 per servings (including guacamole) Serves 2.

Chicken Deviled Eggs Recipe

Ingredients:
6 hard cooked eggs
1/2 cup finely chopped cooked-chicken
3 tablespoons mayonnaise
1 tablespoon grated onion
1 teaspoon Dijon mustard
1/2 teaspoon dry mustard
3/4 teaspoon hot pepper sauce, to taste
1 tablespoon minced parsley
Paprika, for garnish

Instructions:

Cut eggs lengthwise in half. Remove yolks & place in a small bowl.

Marsh yolks with a fork. Add chicken, mayonnaise, onion, Dijon mustard, dry mustard, hot sauce & parsley. Blend well.

Stuff egg whites with yolk mixture. Sprinkle tops with paprika to garnish.

Cover & refrigerate until serving time.
