Green Goddess Dressing Recipe

Ingredients:
1 1/2 cup mayonnaise
4 anchovy fillets, mashed
4 spring onions, finely chopped
1 clove of garlic, crushed
1/4 cup flat-leaf parsley, chopped
1/4 cup chives, finely chopped
1 teaspoon tarragon vinegar

Instructions:

Mix all the ingredients together well. Makes about 1 2/3 cups.

Ingredients:
1/3 c. light olive oil
1 tbl. pistachio oil
2 tbl. white wine vinegar
1 tbl. pistachios, chopped
1 tbl. tarragon, chopped
1/4 packet Stevia

Instructions:

Put ingredients in a small screw-to jar. Season with salt and cracked black pepper and shake until well blended.

Will keep, covered, in the refrigerator for up to 2 days. Makes about 1/3 cup.

Instructions:

Salad Dressing Recipe

Ingredients:
2 eggs, beaten
1/2 cup heavy cream
1 cup vinegar
1-1/2 teaspoons salt
1-1/2 teaspoons mustard
Dash cayenne

Instructions:

1-2 tbsp tomato sauce
1/4 red capsicum
1/4 green capsicum, finely chopped
1 tbsp of chives
1/2 tsp. sweet paprika

Instructions:

Mix all the ingredients together well. Cover and refrigerate for up to 3 days. Makes about 1 2/3 cups.

Beurre Blanc Sauce Recipe

Ingredients:
1 French shallots, chopped
3 tablespoon white wine vinegar
7 oz. unsalted butter, cubed
Lemon juice

Instructions:

Put the shallots, vinegar and 3 tablespoon water in a pan and bring to the boil. Reduce the heat and simmer until reduced to 2 tablespoons. Remove from the heat, strain into a clean pan and return to low heat.

Whisk in the butter a few pieces at a time. The sauce will thicken as the butter is added until it is the same consistency as cream. Season to taste with salt, pepper and lemon juice.

Good with artichoke, seafood and other vegetable dishes.
