Spinach Salad Recipe

Ingredients:
1 lb. fresh spinach, washed, drained and torn into desired pieces
1 lb. fresh mushrooms, sliced thinly
1/2 lb. bacon, cooked and crumbled
4 hardboiled eggs, sliced

Instructions:

Make sure spinach has been well drained and isn’t watery.

Combine all above salad ingredients in a large bowl. (toss the spinach and mushrooms, together, then top with bacon and sliced hardboiled eggs as garnish until time to serve.)

Chill.

This is a wonderful change from a plain iceberg lettuce salad. Leftovers don’t keep well, spinach tends to wilt down. So eat it all at the first serving or shortly thereafter.

Use of Pork Rinds Recipes

Ingredients:
3 oz or 80 gram = 1 cup of pork rind flour or pork rind bread crumbs

Bread crumbs

Crumble pork rinds until they resemble bread crumbs. You can use a food processor, or crush with a rolling pin in a zippered bag.

Flour

Using a blender or food processor, grind pork rinds into a fine flour or brown sugar-like substance by placing one pork rind at a time in blender or food processor and grinding it.

Toppings Recipes using Pork Rinds

Use pork skins for breading since they are light and puffy.

For baking or broiling just roll the meat in the crumbs.

For a casserole topping just sprinkle on top of the dish you are preparing.

Spicey Breading

1 – 6 ounce bag of Pork rinds
2 tablespoon Mrs Dash Seasoning Blend (no salt) = one tablespoon per cup of crumbs

Process pork rinds in food processor (or crush with a rolling pin in a zippered bag). If processed, pour into plastic zipper bag. Add 2 tablespoon Mrs Dash (or your favorite seasoning to taste). Shake bag to distribute seasoning.

Note: If you wish to make a large batch, 5 bags of pork rinds, processed, uses one entire bottle of Mrs. Dash (roughly 8 Tbsp).

Use with chicken, fish, shrimp, mozzarella sticks or other items which take to breading.

2 Cups: Carbohydrates: 4 g (with any seasoning that has fructose = 6 g)

Cheddar Egg Souffle Recipe

Ingredients:
6 eggs, slightly beaten
1 cup shredded cheddar cheese
1/2 cup half and half
2 tablespoon soft butter
1 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Instructions:

Heat oven to 325°F-160°C.

Mix all ingredients. Pour into ungreased baking pan 8″ x 8″ x 2″ or into individual souffle cups.

Bake 25-30 minutes, or until eggs are set.

Serve with crispy bacon.

Carb Count: 2.1 carbs per serving. Serves 3.

Sour Cream Souffle Recipe

Ingredients:
6 large egg yolks
1/2 cup sour cream
1/4 cup grated Parmesan cheese, mix with cream
1/4 teaspoon salt
6 egg whites, stiff-beaten
3 tablespoon butter
1/2 cup sour cream
Sweetened with 1 packet Stevia or to taste

Instructions:

Beat egg yolks till thick and lemon-colored, about 5 minutes

Beat in 1/2 cup of sour cream/parmesan cheese mixture and salt. Fold in egg whites.

Melt butter in a 10″ heavy, oven-going skillet. Pour in egg mixture, leveling gently. Cook over very low heat 10 minutes.

Carefully move to 325°F-160°C oven and bake for 15 minutes until golden and puffed.

Cut into 4 wedges and serve with the sweetened sour cream.

Carb Count: 4 grams per serving. Serves four.

Omelette Souffle Recipe

Ingredients:
Yolks 2 eggs
1/2 teaspoon vanilla
6 packets of Stevia blend
Whites 4 eggs
Few grains salt

Instructions:

Beat yolks of eggs until lemon-colored. Add stevia & salt. Cut and fold in whites of eggs beaten until stiff and dry.

Butter a hot omelet pan, pour in one-half mixture, brown underneath, fold gradually, turn on a hot serving dish, and sprinkle with stevia. Cook remaining mixture in same way. Soufflé should be slightly underdone inside.

Egg Nog Recipe

Ingredients:
6 Eggs, slightly beaten
10 – 12 Packets of Stevia
½ Teaspoon salt
5 Cups heavy cream
1 Teaspoon vanilla
¼ to 1 Cup light rum (optional) or 1 Teaspoon rum extract
Nutmeg

Instructions:

In large sauce pan, combine eggs and salt. Stir in cream.

Cook over low heat, stirring constantly until mixture thickens and coats the spoon.

Remove from heat, stir in the Stevia and vanilla.

Cool; refrigerate immediately.

At serving time, pour into serving bowl. Stir in rum or rum extract and sprinkle with nutmeg. Makes approximately 12 – 16 (½ cup) servings at approximately 3 carbs per ½ cup serving.

Flan Recipe

Ingredients:
3 egg yolks
2 eggs
1-1/2 cups heavy cream
1 cup water
8 packets Stevia
1 teaspoon almond extract
Cooking spray
2 tablespoons chopped almonds

Instructions:

Heat the oven to 350. Pour boiling water into a roasting tray a bit less then half full.

Mix the egg yolks, eggs, cream, water, stevia, and almond extract in a blender until very smooth. Pour into a 1 quart shallow baking dish.

Place the baking dish into the roasting tray and bake 30-35 minutes until a knife inserted in center comes out clean.

Spray a piece of plastic wrap with cooking spray and place over flan.

Refrigerate for 3 hours and garnish with chopped almonds.

Almond Macaroon Cookies Recipe

Ingredients:
1 egg white
Stevia (See amounts below)
1 cup ground almonds

Instructions:

Beat egg whites until stiff peaks form. Add Stevia. Fold in almonds. Drop by teaspoonfuls full onto greased cookie sheet.

Bake at 375° F until golden brown or about 8 – 10 minutes.

Very light.

*Stevia is an herb and comes in many forms. Below is the amounts for this recipe.

12 packets Stevia Blend
6 teaspoons Spoonable Stevia Blend
1-1/2 tsp Stevia Extract Liquid
3/4 tsp Pure Stevia Extract Powder
1/6 tsp “Sweet Leaf” Stevia

Diabetic Chocolate Cookies Recipe

Ingredients:
2 large egg whites, room temperature
1/4 teaspoon cream of tartar
12 packets Stevia blend
2 tablespoons unsweetened cocoa powder
1/8 teaspoon peppermint or mint extract

Instructions:

Preheat oven to 275. In batter bowl, beat egg whites on high speed of electric mixer until very foamy, about 20 seconds. Add cream of tartar and continue to beat 1-2 minutes of until soft peaks form. (Tips of peaks will curl down when beaters are lifted.) Continue beating on high speed, gradually adding Stevia in a slow, steady stream. (Do not add all of the Stevia at once.) Continue beating on high speed 3-4 minutes or until dissolved, mixture is glossy and stiff peaks form. (Tips of peaks will remain upright when beaters are lifted.)

Place cocoa powder in a shaker; sprinkle over egg whites. Using spatula, gently fold cocoa powder into egg whites just until cocoa powder disappears. Gently fold in peppermint extract.

Fill cookie decorating or cookie press with meringue mixture. Make mixture into small rosettes, about 1 1/2 inches in diameter, 1 inch apart. Refill decorator as needed.

Bake 1 hour. Meringues should look dry and have small cracks on the surface. Turn oven off and leave meringues in oven with door slightly ajar for 30-60 minutes or until meringues are thoroughly dry.

Yield: 36 meringue cookies

Variation: Cinnamon Chocolate Meringues: Omit peppermint extract. Combine 1/4 teaspoon ground cinnamon and Stevia in Step 1. Proceed as recipe directs.

Pudding Recipe

Ingredients:
3 eggs
3/4 cup heavy cream
3/4 cup water
1 cup cottage cheese
1/2 cup stevia
1 tsp vanilla extract
Cinnamon

Instructions:

Combine all ingredients in blender until almost smooth.

Pour into 6, 6oz -175ml custard cups. Sprinkle with cinnamon.

Place in a baking pan. Pour hot water in pan to reach 1″ -25mm up sides of custard cups.

Bake at 350 F or 180 C for 35 minutes.
