DIABETIC RECIPE
Lakota Buffalo Pockets (Sioux)
1 large onion 1 large red bell pepper 1 large green bell pepper 1 baby green zucchini 3 pounds buffalo roast black pepper
Wash all vegetables and slice them into small thin pieces.
Slice buffalo roast into small pieces. Using a skillet, brown the slices of buffalo meat.
Mix all vegetables and meat into a large bowl. Sprinkle with black pepper to taste.
Take aluminum foil and shape into a pocket. Fill pockts with vegetable and meat mix.
Preheat oven to 350 degrees. Place pockets on a cookie sheet and put in the ovena nd cook for 20-30 minutes.
Makes 12 1 cup servings.
Carbs: 5 per serving.
